Tilapia Puttanesca

1. Thaw fish, if frozen. Rinse; pat dry with paper towels
- 1 lb. fresh or frozen skinless tilapia fillets
- 1/8 tsp. salt
- 1/2 medium red onion, cut in wedges
- 1 Tbsp. olive oil
- 2 cloves garlic, minced
- 1 14.5-oz. can diced tomatoes
- 2 tsp. dried oregano, crushed
- 1/4 tsp. crushed red pepper
- 1/4 cup pitted kalamata olives
- 1 Tbsp. capers, drained (optional)
- 2 Tbsp. coarsely chopped fresh Italian (flat-leaf) parsley

- 3 cups all-purpose flour
- 3/4 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup unsalted butter, softened
- 1 cup sugar
- 1 egg, beaten

- Powdered sugar, for rolling out dough
Garlic Shrimp on Greens

- 1-1/2 lbs. fresh or frozen large shrimp
- Salt and freshly ground black pepper
- 2 Tbsp. olive oil
- 2 cloves garlic, minced
- 2 Tbsp. white wine or reduced-sodium chicken broth
- 2 Tbsp. white wine vinegar
- 2 tsp. snipped fresh thyme or 1/2 teaspoon dried thyme, crushed
- 1-1/2 cups fresh chicory leaves, trimmed and coarsely torn
- 1-1/2 cups packed fresh baby spinach leaves
- 1 head Belgian endive, trimmed and thinly sliced crosswise
- 1 oz. Parmesan cheese, shaved

- 2 28-oz. cans whole tomatoes
- 1 15.5-oz can navy beans, rinsed and drained
- 1 15.5-oz. can red beans, rinsed and drained
- 2 to 3 Tbsp. chili powder
- 2 Tbsp. red wine vinegar
- Shredded cheddar cheese
- Snipped fresh oregano
- Cooked bacon, crumbled
Drop-Dead Lasagna

- 1 lb lasagna noodles
- Extra-virgin olive oil
- 1 onion, diced
- 3 garlic cloves, minced
- 1 bay leaf
- 1 1/2 lbs ground beef
- 1 lbs ground pork
- 1 tbs fennel seeds
- 1/2 tbs red pepper flakes
- 1 tsp brown sugar
- 1/2 tbs dried oregano
- 6 oz tomato paste
- sea salt and ground pepper
- 2 lbs ricotta cheese
- 1/2 c parmigiano-reggiano
- 1/4 cup finely chopped parsley
- 1/2 cup finely chopped fresh basil
- 2 eggs, lightly beaten
- 2 lbs mozzarella, shredded
- 4 cups Marinara sauce

- Vegetable oil, for searing
- 2 1/2 pounds beef chuck, cut into 2-inch cubes
- Kosher salt and freshly ground black pepper
- 2 tablespoons unsalted butter
- 2 medium onions, cut into 6ths
- 5 cloves garlic, crushed
- 1 tablespoon tomato paste
- 1/3 cup all-purpose flour, or to cover
- 10 cups cold water, or chicken or beef broth, homemade or low-sodium canned
- 6 sprigs parsley
- 6 sprigs fresh thyme
- 2 bay leaves
- 1 1/4 pounds medium red potatoes, quartered
- 4 medium carrots, cut into 2-inch pieces
- 2 celery stalks, cut into 2-inch pieces
- 7 canned whole, peeled tomatoes, lightly crushed
- 2 to 3 teaspoons red wine vinegar, or to taste

- 1 pound fresh cod fillet
- 2 tablespoons olive oil
- 1 large egg, lightly beaten
- 1/4 cup thinly sliced scallions
- 2 tablespoons mayonnaise
- 1 tablespoon fresh lemon juice
- 2 tablespoons Dijon mustard
- 6 tablespoons breadcrumbs
- 3 tablespoons chopped fresh parsley
- 3 hot sauce, such as Tabasco
- Coarse salt and ground pepper
Roast Halibut with Herb Butter
