Preheat oven to 425 degrees, with rack in the middle
- 2 tablespoons butter
- 1 carrot, halved lengthwise and thinly sliced
- 1 medium onion, chopped
- 1 fennel bulb, cored and chopped
- 1/2 teaspoon fennel seed, crushed
- 1/4 cup all-purpose flour, plus more for work surface
- 1 cup whole milk
- 1 can (14.5 ounces) reduced-sodium chicken broth
- 1 rotisserie chicken (about 2 1/2 pounds), skin and bones removed, meat shredded (about 4 cups)
- 1 ham steak (8 ounces), cubed
- 1 tablespoon fresh lemon juice
- Coarse salt and ground pepper
- 9 -inch-round store-bought pie dough (from a 15-ounce package)
Roasted Salmon with Lime and Cilantro Sauce

1. Preheat oven to 450 degrees
- 4 skin-on salmon fillets (6 oz each)
- Coarse salt and freshly ground pepper
- 1/4 cup fresh lime juice
- 2 T soy sauce
- 1 t sugar
- 1 T chopped fresh cilantro leaves
Oven Fried Chicken

1. In a small bowl combine egg and milk
- 1 egg, beaten
- 3 tablespoons milk
- 1-1/4 cups crushed cornflakes or finely crushed rich round crackers (about 35)
- 1 teaspoon dried thyme, crushed
- 1/2 teaspoon paprika
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 2 tablespoons butter or margarine, melted
- 2-1/2 to 3 pounds meaty chicken pieces (breast halves, thighs, and drumsticks)

- 8 boneless skinless chicken thighs, excess fat trimmed (about 1 1/2 pounds total)
- 3 tablespoons olive oil
- 2 teaspoons kosher salt, plus more as needed
- 1 teaspoon freshly ground black pepper, plus more as needed
- Leaves from 2 sprigs thyme, chopped (2 teaspoons)
- 4 ears corn, husks and silks discarded
- 2 red bell peppers, stemmed, seeded and cut into 4 equal pieces
- 1 large red onion, cut into 1/2-inch disks
- 4 cups low-sodium chicken broth, plus more if needed
- 2 medium russet potatoes, peeled and cut into 3/4-inch pieces
- 1/4 cup heavy cream
- 12 basil leaves, coarsely chopped
- 2 scallions (white and light-green parts), cut crosswise into thin slices

1. In large bowl combine both flours, cornmeal, yeast, and salt
- 2 cups all-purpose flour
- 1/2 cup white whole wheat flour or whole-wheat flour
- 1/2 cup cornmeal
- 1/4 tsp. active dry yeast
- 1 tsp. salt
- Olive oil
- 1/2 cup no-salt-added tomato sauce
- 1/2 tsp. dried Italian seasoning
- 3 to 4 cups fresh vegetables such as halved cherry tomatoes, broccoli florets, and shredded radicchio
- 1 cup mushrooms, halved or sliced
- 2 oz. chorizo sausage, cooked and drained
- 1/2 cup crumbled feta cheese or 1 cup shredded mozzarella cheese
