- 1 cup gram flour (besan)
- 1/2 cup water
- 2 tsp oil
- 1 tsp mango powder
- 1/4 tsp cooking soda
- 1/2 tsp red chili powder
- 1-2 chopped green chilies
- Oil to fry

Kadhai Paneer

- 250 gms cottage cheese
- 3 capsicum chopped
- 4 onion chopped
- 4 tomato chopped
- 1 tsp ginger paste
- 1 tsp red chili powder
- 1 tbsp oil
- 1 tbsp coriander leaves chopped
- 2 bay leaf (tej patta)
- 4 cloves
- 1 piece cinnamon

Til Ki Burfi

Til ki burfi is a delightful combination of sesame seeds, soft khoya & sugar
- 400 gm til (sesame seeds)
- 200 gm khoya
- 400 gm sugar
- 1 tsp cardamom powder
- 11/2 cups water
- 1 tbsp coconut powder for garnishing
Apple Soup With Yogurt

- 2 medium green apples
- 2 medium red apples
- 500 gms yogurt
- 2 inch stick cinnamon
- 1 tsp cumin seeds, coarsely powdered
- 1 tsp coriander seeds, coarsely powdered
- 1 tbsp olive oil
- 1 medium onion chopped
- 1 tsp ginger chopped
- 1 tsp garlic chopped
- 1/2 tsp turmeric powder
- 50 gms butter
- 500 ml vegetable stock
- Crushed black peppercorns to taste
Stuffed Bhindi

Dry, shallow fried, spicy masala filled bhindi is a heavenly experience in every bite
- For stuffing:
- 250 gms tender bhindi (ladies finger/okra)
- 3-4 curry leaves
- 1/4 tsp asafoetida
- 1/2 tsp cumin seeds
- 1 tbsp oil
- 1 1/2 tsp ginger-green chili paste
- 1/2 tbsp roasted coriander powder
- 1/2 tbsp white sesame seeds
- 1/2 tsp turmeric powder
- 1 tsp red chili powder
- 1 tsp roasted cumin powder
- 1/4 tsp garam masala powder
- 3 tbsp fresh coconut grated
- 3-4 tbsp coriander leaves finely chopped
- Salt to taste
Rajgira Puri

- 2 boiled, peeled & mashed potatoes

- 1 litre milk
- 15 almonds,blanched & peeled
- 15 cashew nuts,soaked
- 15 pistachios,blanched & peeled
- 2 tbsp melon seeds (magaz) soaked
- 2 tbsp poppy seeds (khuskhus/posto),soaked
- A few strands of saffron (kesar)
- 2 tbsp fennel seeds (saunf)
- 5-6 green cardamoms
- 15-20 rose petals
- 8-10 black pepper corn
- 1/2 cup sugar or as per taste
