Lower fat, lower sodium version of Greek classic
- 2 pounds frozen chopped spinach, thawed
- 2 cups fresh parsley, chopped
- 1 cup scallions, chopped
- 1/4 cup fresh mint, chopped
- 1 cup ricotta cheese, part skim
- 2 whole eggs, beaten with the egg whites
- 2 egg whites, beaten
- 1/4 cup dry breadcrumbs (or 2 Tbsp gluten flour)
- 1/2 tsp pepper (black and/or white)
- 1/2 tsp nutmeg
- 6 oz (8-9 sheets) phyllo dough, thawed
- 1/4 c olive oil

Add milk to a small saucepan
- For the Earl Grey Cake:
- 1 cup (240 mL) whole milk
- 1 vanilla bean
- 4 bags Earl Grey tea
- 3 cups (360 grams) all-purpose flour
- 2 1/2 teaspoons baking powder
- 1 teaspoon finely ground Earl Grey tea leaves
- 1/2 teaspoon salt
- 1 cup (225 grams) unsalted butter, at room temperature
- 2 cups (400 grams) granulated sugar
- 4 large eggs, at room temperature
- 1/4 teaspoon Bergamot extract (optional)
- For the Chocolate Lavender German Buttercream FrostingL
- 1 cup (240 mL) whole milk
- 1 tablespoon dried culinary lavender
- 3/4 cup (150 grams) granulated sugar
- 2 tablespoon (15 grams) cornstarch
- 1 egg
- 1 egg yolk
- 2 cups (450 grams) unsalted butter, sliced, at room temperature

- 1 1/2 cups crushed pretzels
- 1/4 cup white sugar
- 2/3 cup butter, melted
- 1 (14 ounce) can sweetened condensed milk
- 1/4 cup fresh lime juice
- 1/4 cup tequila
- 4 tablespoons orange liqueur
- 1 cup sliced fresh strawberries (may use frozen strawberries)
- 2 drops red food coloring
- 2 drops yellow food coloring
- 2 cups whipped cream, divided
Ranch Dressing-Homemade

Seasoning Mix: Whisk all ingredients together until blended
- Seasoning Mix:
- 1/3 cup dry buttermilk(**see note below**)
- 2 Tbsp. dried parsley
- 1 1/2 tsp. dried dill weed
- 2 tsp. garlic powder
- 2 tsp. onion powder
- 2 tsp. dried onion flakes
- 1 tsp. ground black pepper
- 1 tsp. dried chives
- 1 tsp. salt
- You can omit the buttermilk powder if you would like to use fresh buttermilk, or if you would just like the straight spices for the seasoning mix.**
- To Make Ranch Dressing:
- Combine 1 Tbsp. seasoning mix with 1/3 cup mayo and 1/3 cup milk

Almond Cloud Cookies - Dairy & Gluten Free

Dairy free, gluten free, quick-n-easy
- Tips from our bakers:
- 10 ounces almond paste
- 1 cup sugar
- 1/4 teaspoon salt
- 2 large egg whites, lightly beaten
- 1/4 teaspoon gluten-free almond extract
- 1/8 teaspoon extra-strong bitter almond oil
- Confectioners' sugar or glazing sugar, for topping
- The traditional version of these cookies features a hint of lemon or orange. Use 1/8 teaspoon lemon or orange oil in place of the bitter almond, if desired.
- For a chocolate-almond version:
- Add 1 cup chocolate chips to the dough right after you've added the egg whites. Bake as directed. Yield: 28 cookies.
- For an Italian pignoli version:
- Using about 2/3 cup (3 1/2 ounces) pine nuts (pignoli), dip the tops of unbaked cookies in the nuts. Flatten them gently on the baking sheet, and bake as directed.
- To make a pistachio or hazelnut version:
- Use 6 ounces almond paste and 4 ounces pistachio or hazelnut paste; 2/3 cup sugar, and 1/8 to 1/4 teaspoon pistachio or hazelnut flavoring.
