- 2/3 cup milk

Place the Sugar, Honey and Water in a saucepan and bring to a strong boil
- I cup plus 3 tablespoons (250 grams) Sugar
- 1/4 cup (75 grams) Honey
- 1/3 cup plus 1 tablespoon plus 2 teaspoons (100 grams) Water
- 3 cups plus 3 tablespoons (500 grams) blanched, whole, Almonds or equivalent of Almond Flour
- 1/4 cup plus 1 tablespoons plus 1 teaspoon (50 grams) Kirsch or simple syrup, optional*
- Scant 1/4 cup (50 grams) butter*
Roasted Celery Root and Carrots

Place a rimmed baking sheet on the bottom oven rack and preheat to 425 degrees F
- 3 pounds celery root, peeled and cut into 1-inch chunks
- 6 tablespoons extra-virgin olive oil
- 2 tablespoons chopped fresh thyme
- 1 teaspoon hot paprika

Heat a 2-quart sauce pot over medium, add the raw bacon and cook 4 minutes until the bacon is crispy
- 3 slices smoked bacon, chopped
- 1 cup diced onion
- 1 tablespoon minced garlic

- 1/2 tablespoon minced thyme
- 1 pinch chili flakes
- 1 cup chopped canned tomatoes

Combine the 1½ cups cherries, milk, 1 cup of cream, sugar and salt in a medium saucepan
- 1 1/2 cups pitted and halved fresh cherries
- 3/4 cup milk
- 1 3/4 cup heavy cream
- 1/2 cup sugar
- Pinch of salt
- 2 tablespoons amaretto liqueur
- 1/3 cup pitted and chopped fresh cherries
- 1/3 cup dark chocolate chips or chunks
