- Sugar Icing:
- 2 3/4 cups golden raisins
- 2 cups dried currants
- 1 cup orange zest

- 3/4 cup chopped candied citron

- 1/3 cup green candied cherries

Sweet Potato Chipotle Cheddar Soup

Heat oil in large heavy-bottomed pot over medium-high heat
- 3 tablespoons extra-virgin olive oil
- 1 yellow onion, diced
- 1 cup chopped celery
- 3/4 teaspoon salt
- 1 teaspoon ground cumin
- 1/4 teaspoon ground cinnamon
- 2 large sweet potatoes, peeled and cut into 1 1/2-inch chunks
- 6 cups reduced-sodium chicken or vegetable broth

- 1 cup all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/4 teaspoon salt

- 1/2 14 oz can pumpkin
- 3 T peanut butter (unsalted)
- 4 egg whites or 2 whole eggs
- 1/2 t cinnamon
- 1/4 to 1/2 cup water
- 3 cups whole wheat flour
Espresso-Infused Dark Chocolate Brownies {And Orange Essence}

Preheat the oven to 350°F
- For brewed espresso:
- 4 eggs
- 2 1/4 cups sugar
- 1 1/4 cups dark cocoa
- 1 1/4 butter, melted
- 1.5 tsps. espresso powder
- 1 tsp. salt
- 1 tsp. baking powder
- 1 1/2 cups unbleached all-purpose flour
- 2 cups semi-sweet chocolate chips
- 1 tsp. orange zest
- 2 oz. extra bold espresso*
- Make espresso on stovetop espresso maker as you normally would only adding 4 Tbsp. less water. Do not sweeten.
