Chopped Salad with Shrimp and Curry Dressing Recipe

Whisk all of the ingredients for the dressing into a medium bowl
- 1 lb raw shrimp, peeled and deveined
- 1 bunch purple kale, stems removed and chopped
- 6-8 leaves Napa cabbage, chopped
- 1 carrot, shredded
- 1 bell pepper, diced
- 1 avocado, peeled and diced
- 2 mangos, diced
- 2 green onions, thinly sliced
- 1 ⁄3 cup fresh cilantro, chopped
- 1 tbsp ghee or coconut oil
- Sea salt and freshly ground black pepper
- 1 cup full-fat coconut milk
- Juice of 1 lime
- 1 1⁄2 tbsp coconut aminos
- 1 small garlic clove, minced
- 2 tsp curry powder
- Pinch of cayenne pepper, or more to taste
- Sea salt to taste
Quinoa and Black Bean Salad Recipe

In a small saucepan, bring broth and water to a boil
- 1 cup vegetable broth
- 1 cup water
- 1 cup quinoa, rinsed
- 1 medium sweet orange pepper, chopped
- 1 small red onion, chopped
- 1 garlic clove, minced
- 1 can (15 ounces) black beans, rinsed and drained
- 1 cup frozen corn, thawed
- 2 cups cherry tomatoes, halved
- 1/4 cup olive oil
- 2 tablespoons lime juice
- 1 teaspoon balsamic vinegar
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 teaspoon chili powder
- 1 medium ripe avocado, peeled and cubed
- 2 tablespoons minced fresh cilantro

Creamy Chicken and Wild Rice Soup

Directions Prepare rice according to directions listed on package
- 3/4 cup uncooked wild rice blend*
- 1 cup chopped yellow onion (from about 1 small onion)
- 1 cup diced carrots (from 2 medium)
- 1 cup diced celery (from 2 - 3 stalks)
- 7 Tbsp butter, diced, divided
- 1 clove garlic, minced
- 4 1/2 cups low-sodium chicken broth (measured from 3 14.5 oz cans)
- 1/4 tsp of each dried thyme, marjoram, sage and rosemary
- Salt and ground black pepper, to taste
- 1 lb boneless skinless chicken breasts halves
- 1/2 cup flour
- 1 1/2 cups milk
- 1/2 cup heavy cream
- 1 tsp lemon zest
Ultimate Grilled Cheese Sandwiches

These have replaced grilled cheese sandwiches in our house
- 1/4 cup (1/2 stick) butter, room temperature
- 1 tablespoon Dijon mustard
- 2 teaspoons minced fresh thyme
- 2 teaspoons minced fresh parsley
- 1-2 cloves finely minced garlic
- 8 6x4-inch slices bread (about 1/2-inch thick)
- 1/2 pound cheddar cheese, thinly sliced
- 1/2 pound swiss cheese
- 1/4 pound thinly sliced smoked ham
- 1/2 small white onion, carmelized
- 1 large tomato, thinly sliced
Mexican Salad with Lime Dressing

Instructions Combine all salad dressing ingredients and shake or whisk them together then set aside
- 1 large head Romaine Lettuce, rinsed, chopped and dried
- 1 cup Cherry or grape tomatoes, halved (or large tomato, diced)
- 1 avocado, diced
- 1/2 English cucumber, sliced
- 1/2 small red onion, thinly sliced
- l cup Snap peas, cut along the diagonal
- 1/2 cup corn kernels (canned or freshly cooked)
- 1/2 cup black beans, rinsed
- 1/3 bunch fresh cilantro
- crumbled queso fresco
- 1/3 cup extra virgin olive oil
- Juice of 2 medium limes (about 1/3 cup)
- 1/4 - 1/2 tsp tabasco sauce, or to taste
- 1/2 tsp sea salt
- 1/8 tsp black pepper, freshly ground
