Whisk lime juice, honey, cumin and salt in a small bowl
- 1 lime, juiced
- 2 tsp honey
- 1 tsp cumin
- 1/4 tsp salt
- 1 1/2 cups thinly sliced peeled mango (can use frozen if you can't find fresh)
- 1 1/2 cups julienne-cut peeled jicama
- 1/4 cup thinly sliced red onion
- 1 avocado, peeled and cubed
- 1 jalapeno, seeded and diced
- cherry tomatoes, halved
- 1/4 cup chopped cilantro
Poblano Pesto

- 1/2 cup grated Parmesan

This is the combination of a couple of recipes
- RUB:
- 8 lbs pork butt
- 3 Tbls chili powder
- 2 Tbls pepper
- 2 Tbls cumin
- 2 Tbls coriander

- SAUCE:
- 1 cup brown sugar
- several cloves of garlic
- 1/2 cup molasses

Tomato Fennel Soup

1. In a large saucepan, heat olive oil over medium-high heat
- 2 tbsp. olive oil
- 1/2 onion, chopped
- 1 stalk celery, chopped
- 1 clove garlic, minced
- 1 fennel bulb, chopped
- 1 can (14.5 ounces) diced tomatoes
- 1 cup low sodium chicken broth (use vegetable broth to make this recipe vegan)
- 2 tbsp. chopped fresh basil
- 2 tbsp. chopped fresh parsley
- Salt and fresh ground pepper to taste
Seared Mahi Mahi with Green Gazpacho Sauce

Gazpacho (a traditional chilled soup that originated in Spain) becomes a sauce for fish fillets
- 1 1/2 cups coarsely chopped English hothouse cucumber (about 1/2 large)
- 3/4 cup coarsely chopped green onions
- 1/2 cup coarsely chopped fresh cilantro
- 5 1/2 tablespoons olive oil, divided
- 1 1/2 tablespoons (or more) white balsamic vinegar
- 2 1/2 teaspoons chopped seeded serrano chiles
- 4 7-to 8-ounce mahi-mahi fillets
- 1 1/2 teaspoons ground cumin
- 6 ounces small red and yellow cherry, pear, or grape tomatoes, halved

Crispy Baked Sweet Potato Fries

Hello! I cook fresh, vegetarian recipes
- Sweet potatoes. I’d plan on at least one per person. Medium-sized sweet potatoes with smooth, firm, evenly toned skin usually make the best sweet potato fries.
- Corn starch. A big sprinkle's worth. (optional)
- Olive oil. A couple of tablespoons or so. Enough to lightly and evenly coat the fries.
- Salt, pepper and spices. Amy suggested cumin, but I much prefer cayenne pepper, paprika or curry powder. Garlic is great as well. It’s up to you!
White Bean and Arugula soup

Make soup: Soak beans in cold water to cover overnight (8 hours)
- For soup
- 1 lb dried small white beans such as navy or Great Northern
- 1 lb smoked ham hocks
- 1/4 cup bacon drippings (from 1/2lb bacon) or olive oil
- 2 cups chopped onion
- 2 tablespoons minced garlic
- 1 lb tomatoes, peeled, seeded, and diced
- 4 fresh thyme sprigs
- 8 cups chicken broth
- For corn bread croutons
- 3 tablespoons unsalted butter
- 1 garlic clove, minced
- 3 cups 3/4-inch cubes corn bread
- 1 lb arugula, coarse stems removed
- Tabasco to taste
