  • 1/4 cup vegetable oil, divided
  • 2 1/2 pounds beef chuck stew meat, cut into 1 inch cubes.
  • 1 large onion, diced
  • 5 garlic cloves
  • 1 TBS chopped rosemary
  • 2 bottles, 24 ounces, American porter-rich dark ale.
  • 3 cups low-sodium beef broth
  • 1/2 cup tomato paste
  • several thyme sprigs
  • 2 bay leaves
  • 3 carrots, peeled and sliced
  • 3 stalks celery, diced
  • 3 lg. red bliss potatoes, washed and diced
  • Kosher salt
  • fresh ground pepper
  • 1-2 tsp crushed red pepper flakes (optional)
  • 4 TBS unsalted butter
  • 1 TBS flour
  • 1 TBS cornmeal

  • 11/2 cups white wine, pour remaining wine in a wine glass
