Mix all ingredients and chill
- 1 bottle or red wine (cheap is good)
- 1 can lemon-lime soda
- 1 1/2 cups orange juice
- 1/2 cup of brandy
- 1/4 cup sugar
- 1/4 cup orange flavor liquer
- 2 Tbls grenadine
- 2 Tbls fresh lemon juice
- 2 Tbls fresh lime juice
Peruvian Tabouli

Combine first 9 ingredients
- 1 cup uncooked quinoa, prepare according to directions
- 1 avocado, peeled and cubed
- 1 red bell pepper, cut into small pieces
- 1 can black beans
- 1 can corn
- 4 oz cotija cheese
- 8 or so Kalamata olives, chopped
- 1/2 cup chopped cilantro
- lime zest and juice of 1 lime
- Olive oil ( 1/4 – 1/2 cup)

Preparation Heat oil in large deep skillet over medium-high heat
- 1 tablespoon olive oil
- 1 cup chopped onion
- 3 garlic cloves, minced
- 3 cups (or more) bottled clam juice
- 1 (15-ounce) can white hominy, drained, rinsed
- 1 cup salsa verde (tomatillo salsa), medium or mild
- 2 tablespoons finely chopped sun-dried tomatoes in oil
- 1 tablespoon finely grated lime peel
- 1 pound uncooked jumbo shrimp, peeled, deveined
- 1 pound large sea scallops, halved horizontally
- 4 tablespoons chopped cilantro, divided

- Avocado aioli
- 1 medium very ripe avocado
- 1 ⁄3 cup plain, fat-free Greek-style yogurt
- 1 tablespoon chopped basil
- 2 teaspoons minced garlic
- 1 teaspoon fresh lemon juice
- 1 ⁄2 teaspoon salt
- 1 ⁄4 teaspoon ground black pepper
Beef and Porter Stew

This is the yummiest stew ever
- 1/4 cup vegetable oil, divided
- 2 1/2 pounds beef chuck stew meat, cut into 1 inch cubes.
- 1 large onion, diced
- 5 garlic cloves
- 1 TBS chopped rosemary
- 2 bottles, 24 ounces, American porter-rich dark ale.
- 3 cups low-sodium beef broth
- 1/2 cup tomato paste
- several thyme sprigs
- 2 bay leaves
- 3 carrots, peeled and sliced
- 3 stalks celery, diced
- 3 lg. red bliss potatoes, washed and diced
- Kosher salt
- fresh ground pepper
- 1-2 tsp crushed red pepper flakes (optional)
- 4 TBS unsalted butter
- 1 TBS flour
- 1 TBS cornmeal
White wine and sage sauce

Melt butter in a saucepan
- 3 tbs butter
- 1 large shallot, minced
- 3 garlic cloves, minced
- 11/2 cups white wine, pour remaining wine in a wine glass
- 2 cups half and half
- 1 tbs corn starch
- 1/2 tsp cayenne
- 1 tbs fresh sage
- 1 tsp freshly grated nutmeg
- chopped parsley for garnish
Spiced Pecans

Line a half sheet pan with parchment paper and set aside
- Spiced Pecans:
- 1 teaspoon kosher salt
- 1/2 teaspoon ground cumin
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon dried ground orange peel
- 1 pound pecan halves
- 4 tablespoons unsalted butter
- 1/4 cup packed light brown sugar
- 2 tablespoons packed dark brown sugar
- 2 tablespoons water
Garlic Roast Chicken with Rosemary and Lemon

Directions Preheat oven to 450 degrees F
- 2 1/2 pounds boneless, skinless chicken breasts, cut into large chunks
- 6 cloves garlic, crushed
- 3 tablespoons fresh rosemary leaves stripped from stems
- 3 tablespoons extra-virgin olive oil, eyeball it
- 1 lemon, zested and juiced
- 1 tablespoon grill seasoning blend (recommended: Montreal Seasoning) or, coarse salt and black pepper
- 1/2 cup dry white wine or chicken broth
Flourless Chocolate Cake

I made this for a girlfriend that is on a gluten free diet
- 4 ounces fine-quality bittersweet chocolate (not unsweetened)
- 1 stick (1/2 cup) unsalted butter
- 3/4 cup sugar
- 3 large eggs
- 1/2 cup unsweetened cocoa powder plus additional for sprinkling
