Lemon Melting Moment

Preheat oven to 150 degrees Celsius / 300 F
- Filling:
- 200 g [7/8 cup, or approx 14 tablespoons] unsalted butter, room temperature
- 1/4 teaspoon salt
- 1/2 cup confectioners sugar
- 1 1/2 cups all-purpose flour
- 1/2 cup cornstarch
- 1 teaspoon vanilla extract
- zest of one lemon
- 1 cup confectioners sugar
- 50 [ 1/4 cup, or approx 3.6 tablespoons] grams unsalted butter, room temperature
- juice of one lemon
- an extra 1/2 cup of confectioners sugar gives a thicker consistency
Reeses peanut butter no-bake bars

Combine all ingredients, except chocolate chips in a medium sized bowl
- 1 cup salted butter (melted)
- 2 cups keebler graham cracker crumbs
- 1/4 cup brown sugar
- 1 3/4 cup powdered sugar
- 1 cup peanut butter
- 1/2 tsp. vanilla
- 1 (11 oz) bag milk chocolate chips
Praline Cookies

Preheat oven to 375. Microwave butter on HIGH for 40-45 seconds or until butter is melted
- 1/2 cup butter
- 1/2 cup brown sugar, packed
- 1/2 cup sugar
- 1 egg, lightly beaten
- 1 1/2 cups all-purpose flour

The BEST Baked Cheesecake

Very easy to mix up in a food processor
- For the crust:
- 2/5 cups graham cracker crumbs (2 packs)(or other cookie suitable)
- 1/2 c finely chopped pecans (optional)
- 1/4 cup sugar
- 1/2 cup butter, softened
- For the cheesecake:
- 2 lbs cream cheese (4/8oz pkgs)
- 6 eggs
- 8 oz heavy cream (240 mls)
- 1/3 cup sour cream (90mls)
- 1 teas vanilla (15 mls)
- 2 cups confectioners sugar (icing sugar)
- 2 Tbs lemon juice
- 2 T flour

Copycat Payday Candy

Make the caramel/dulce de leche (skip this step if you bought it already made): 1
- 1 (14-ounce) can sweetened condensed milk or dulce de leche
- 32 ounces (4 cups) salty roasted peanuts, divided
- 4 tablespoons (1/4 cup) unsalted butter
- 2 cups mini marshmallows
- 1/2 cup creamy peanut butter
Old Fashioned Butter Cake

Preheat oven to 350*F. Grease and flour two 8 inch x 2 inch baking pans and set aside
- 2 cups all-purpose flour, sifted
- 1 1/4 cup sugar
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1/2 cup butter, softened
- 1 cup milk
- 1 teaspoon vanilla extract
- 2 eggs
- Preheat oven to 350*F. Grease and flour two 8 inch x 2 inch baking pans and set aside.
- In a large mixing bowl sift together the flour, sugar, baking powder and salt.
- Add butter, milk, and vanilla. With a hand mixer, beat for 2 minutes, occasionally scraping down the sides of the bowl.
- Add eggs and beat for 2 minutes more.
- Pour batter into prepared pans, dividing equally between the pans. Bake 30 to 35 minutes, or until a toothpick inserted into the center comes out clean. Remove from oven.
- Cool in the pans for 10 minutes and then turn cakes out onto a cooling rack to cool completely.
- Frost with your favorite frosting. I used my favorite chocolate frosting, the one on the back of the Hersey's cocoa can.
Eggs in Hell

Place a skillet, preferably cast iron, on the grill over medium-high heat
- 4 tablespoon extra-virgin olive oil
- 1 medium onion coarsely chopped
- 6 cloves garlic thinly sliced
- 4 jalapeño peppers seeded and cut into 1/4 inch dice
- 1 teaspoon hot chile flakes
- 3 cup basic tomato sauce
- 8 large eggs
- 1/4 grated Parmigiano Reggiano or Pecorino
- Shredded basil
- Salt and pepper

- 1 lb ground beef
- 1 medium onion, chopped
- 1.5 cups rice
- 1 can tomato soup
- 1.5 soup cans of water
- 1/2 head medium cabbage, chopped
Chili Beef Lettuce Wraps

Chili Beef Lettuce Wraps are a quick and healthy meal
- Olive oil, for frying
- 1/2 pound ground beef
- 1/2 pound ground pork
- Toasted sesame oil, for frying
- 2 garlic cloves, peeled and finely chopped
- 2 inch piece of fresh root ginger, peeled and finely chopped
- 1 to 2 red chillies, deseeded and chopped
- 1 tablespoon light brown sugar
- 1 tablespoon fish sauce
- Zest of 1 lime, juice of 1/3 lime
- 3 green onions, trimmed and chopped
- Sea salt and freshly ground black pepper, to taste
- 2 little gem lettuces, separated into leaves, to serve
- DRESSING
- 1 tablespoon soy sauce
- Juice of 1/2 lime
- 1 teaspoon sesame oil
- 1/2 red chilli, thinly sliced
- Small bunch of cilantro leaves, chopped
- 1 to 2 teaspoons fish sauce, to taste
- 1 teaspoon light brown sugar
- 1 tablespoon olive oil
