Baked Garlic Parmesan Chicken

Preheat oven to 400 degrees F
- 1/2 cup Mayonnaise
- 1/2 cup shredded Parmesan cheese
- 4 boneless skinless chicken breast cutlets.
- 4-5 teaspoons Italian seasoned dry bread crumbs
- 1/2 teaspoon garlic powder
- pinch of salt
- 1/2 teaspoon lemon pepper
Spicy Chicken Enchilada Pasta

Heat olive oil over medium hight heat in a 12-inch oven safe skillet until hot
- 1 lb boneless chicken, cut into small bite-sized pieces
- 1 Tbsp olive oil
- 2 Tbsp dried minced onion flakes
- 1 tsp garlic powder
- 1 jar (12oz) enchilada sauce
- 1 (15oz) can black beans, drained and rinsed
- 1/4 cup chicken broth
- 1 cup salsa
- 1/2 cup heavy cream
- 8 oz penne pasta
- 1 cup Pepper Jack cheese, shredded
- 2 Tbsp chopped fresh parsley or cilantro
Homemade Cultured Buttermilk

Pour buttermilk (1/4 cup for a quart jar or ½ cup for a half gallon jar) into your clean jar
- Also needed:
- 1/4 to 1/2 cup cultured buttermilk (from the store or home cultured)
- 1 to 2 quarts skim,1%, 2%, or whole milk from the store or raw milk
- 1 clean, dry quart or half gallon jar with a tight fitting two piece lid.
Barefoot Contessa's Lemon Bars

Deliciously sweet lemon bars with a shortbread crust and a rich lemon filling
- CRUST:
- 1/2 pound unsalted butter, room temperature
- 1/2 cup granulated sugar
- 2 cups all-purpose flour
- 1/8 teaspoon kosher salt
- FILLING:
- 6 extra-large eggs, room temperature
- 3 cups granulated sugar
- 2 tablespoons grated lemon zest (4 to 6 lemons)

Sweet and Spicy Chicken Recipe

Bake chicken according to the directions on the packaging or fry or bake your own
- 1 pound (500g) of fully cooked crispy chicken strips (store bought or home made)
- 1/2 Cup of Light Brown Sugar
- 4 tablespoons of honey BBQ sauce
- 3 Tablespoons of Hot Sauce
- 1/4 Cup of Water
Spicy Honey Glazed Chicken

Mix spices together and set aside
- 1 package boneless skinless chicken thighs (you should get about 8 thighs per package)
- 2 teaspoons smoked paprika (regular paprika works well too but smoked brings more flavor)
- 2 teaspoons garlic powder
- 1 teaspoon kosher salt
- 1 teaspoon fresh cracked pepper
- 1 teaspoon red pepper flakes (use less if you don't like heat)
- 1 teaspoon chili powder
- 1/2 cup honey
- 2 tablespoons apple cider vinegar

New York Cheesecake

Generously butter the inside of a 10-inch springform pan
- 5 large eggs, room temperature
- 2 cups (one pint) sour cream, room temperature
- 4 8-ounce packages cream cheese, room temperature
- 8 tablespoons (one stick) unsalted butter, room temperature
- 1 1/2 cups sugar
- 2 tablespoons cornstarch
- 1 1/2 teaspoons vanilla extract
- 1 teaspoon fresh lemon juice
- 1 teaspoon grated lemon zest
Lemon Pound Cake

Preheat oven to 350F Spray or butter and flour 2 loaf pans or one large Bundt pan
- 3 cups all-purpose flour
- 1 Tbsp baking powder
- 3/4 tsp salt
- 3 cups sugar
- 1 cup unsalted butter, room temperature
- 1/2 cup shortening, room temperature
- 5 large eggs
- 1 cup whole milk
- 6 Tbsp lemon juice
- 1 lemon, zested
- Preheat oven to 350F
- Spray or butter and flour 2 loaf pans or one large Bundt pan.
- Sift flour, baking powder and salt into medium bowl. Set aside.
- Using an electric mixer, cream together butter, shortening and sugar. Add eggs one at a time, beating until well blended after each one.
- Add dry ingredients in three additions to butter mixture alternately with milk, beginning and ending with flour mixture. Beat at low speed just until blended after each addition. Mix in lemon juice and zest.
- Pour batter into prepared pans. Bake cakes until tester inserted into center comes out clean, about 55 minutes. Cool cakes in pans for 15 minutes. Turn cakes out onto racks and cool completely.
Christmas Cake

- 600 g raisins
- 200 g currants
- 100 g dried sour or glacé cherries
- 250 g mixed dried fruits – try prunes, apricots, apples, pears – finely chopped
- 400 ml booze, plus extra to ‘feed’ the cake (brandy, sherry, Tia Maria and rum all work well)
- 300 g butter, at room temperature
- 200 g dark brown sugar
- 1 lemon
- 4 eggs, at room temperature
- 2 tbsp treacle
- 300 g plain flour
- 1/2 tsp ground ginger
- 1 tsp ground cinnamon
- A pinch of ground cloves
- 150 g ground almonds
- 150 g walnuts, chopped
