Cheesy Garlic Bites

Preheat oven to 450 degrees
- 2 cans buttermilk biscuits (not the flaky kind)
- 20 balls (cherry size) or mozzarella cut into cubes
- 3 tablespoons olive oil
- 6 cloves garlic, minced
- pinch crushed red pepper flakes
- 2 tablespoons butter
- 1/4 cup white wine
- 1/4 tsp. salt
- 1 cup shredded mozzarella cheese
- 1/2 cup shredded parmesan cheese
- salt and basil to taste
Chicken Cordon Bleu Casserole

1. Preheat oven to 350 degrees and spray a 9x13 casserole dish with nonstick spray
- Base:
- 1 large rotisserie chicken, meat removed and pulled (about 5-6 C)
- 1/2 pound sliced deli-style black forest ham, chopped
- 1/2 pound sliced swiss cheese
- Sauce:
- 4 Tb butter
- 4 Tb flour
- 3 C milk
- 2 Tb lemon juice
- 1 Tb dijion mustard
- 1 1/2 tsp salt
- 1/2 tsp smoked paprika
- 1/2 tsp pepper
- Topping:
- 4 Tb melted butter
- 1 1/4 C seasoned bread crumbs
- 1/4 C parmesan cheese

Combine the milk and vinegar in a small bowl for 10 minutes to "sour"
- 3/4 cup milk
- 2 tablespoons white vinegar (see note)
- 1 cup all purpose flour
- 2 tablespoons white sugar (I used 3)
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 egg
- 2 tablespoons melted butter
- 1 teaspoon vanilla

- 3 Tablespoons Brown Sugar

- 1 lb (500 g) top sirloin or flank steak, thinly sliced into 1/8-in (3-mm)-thick strips
