Potato Salad with Peas & Chives, GF & FODMAP

Preparation:Cook potatoes in large pot of boiling salted water until just tender, about 25 minutes
- 3 - pounds (1.4 kg ) small red-skinned new potatoes, scrubbed, unpeeled and cut into bite-sized pieces
- 3 tablespoons white wine vinegar
- 1 medium celery stalk, diced
- ½ cup (75 g) frozen green peas, thawed or 1 cup (180 g) drained canned peas
- 1 cup (226 g) mayonnaise
- 1 tablespoon Dijon mustard
- 1 tablespoon Garlic-Infused Oil, made with vegetable oil, or purchased equivalent
- 6 tablespoons chopped fresh chives
- Kosher salt
- Freshly ground black pepper
TJ's Blueberry-Lemon Hand Pies

Directions Remove both pie crust rolls from refrigerator and let soften on counter (about 15 minutes)
- 2 rolls (1 box) TJ’s Pie Crust, defrosted in fridge overnight
- 1 bag (1 1/2 cups) TJ’s Frozen Wild Boreal Blueberries
- 2 TJ’s Lemons, zested
- 4 Tbsp TJ’s Lemon Curd
- 1 tsp TJ’s Unbleached All Purpose Flour, plus more for rolling dough
- 1 large TJ’s Egg, beaten with 1 tsp Water
- 1/4 cup TJ’s Turbinado Sugar (optional for sanding tops)
- You will also need a wide-mouthed jar or circular cookie cutter (3.5 in diameter = about 7 hand pies)
Country Potato Soup GF

Satisfying, chunky and creamy-rich, this allergy-friendly soup warms you up as the weather grows colder
- 2 pounds potatoes, peeled and cubed (4-5 potatoes)
- 1-2 tablespoons gluten-free chicken or vegan
- soup base*
- 1/2-1 cup light whipping cream or milk or dairy-free
- milk of choice (coconut, soy, rice)
- Chopped parsley, cilantro, dill fronds or chives, for garnish, optional
Soy Balsamic Thighs with Asparagus

Instructions In a ziplock bag, combine vinegar, soy sauce, garlic, parsley, pepper
- 3 tablespoon balsamic vinegar
- 4 tablespoon low sodium soy sauce
- 2 tablespoon finely minced garlic
- 3 tablespoon finely chopped fresh parsley
- dashes black pepper
- 1/4 cup melted butter or olive oil
- 6 bone-in chicken thighs, preferably skin removed
- 1 bundle asparagus, trimmed
Marinated Flank Steak

1. Score one side of the steak by making shallow cuts in a crosswise pattern
- 1 lb Flank steak
- FOR THE MARINADE
- 3/4 cup vegetable oil
- 1/4 cup soy sauce
- 1/4 cup brown sugar
- 2 tablespoons vinegar
- 2 cloves garlic clove, minced
- 2 tablespoons onion, grated
- 1 tablespoon ginger, fresh grated

1. To grind cranberries, first freeze, then grind in food processor
- 1 cup cranberries, raw, ground
- 1 cup apple, ground
- 1 cup sugar
- 1 small package lemon flavored gelatin
- 1 cup pineapple juice
- 1/2 cup grapes, seeded if necessary, cut in half
- 1/4 cup walnuts, chopped
- 6 slices pineapple
- 1 cup water

Creamy Greek Salad Dressing
