- 1 pk (8 oz) Neufchatel cheese, softened
- 3 tbsp honey
- 1 tbsp finely chopped crystallized ginger
- 1/4 tsp ground cardamom
- 1 cup strawberries
- 1 small papaya, peeled, seeded and cut into chunks
- 1 small star fruit, sliced
- 1/2 pineapple, cored, trimmed, and cut into spears
- 1/2 cup Brazil nuts, chopped
Blackened Tuna Steaks with Mango Salsa

1.) Whisk together the olive oil, lime juice, and garlic in a bowl
- 2 tbsp olive oil
- 2 tbsp lime juice
- 2 cloves garlic, minced
- 4 tuna steaks
- 1 Fresh mango, peeled, pitted, and chopped
- 1/4 cup red bell pepper, finely chopped

- 1 tbsp extra virgin olive oil
- 8 oz sliced white mushrooms
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 pt cherry tomatoes
- 1 14 oz can artichoke hearts, drained and chopped
- 1/4 cup Pesto or store-bought pesto
- 4 tsp grated Romano cheese
Easy Brccolini Flounder Bake

Preheat the oven to 450 degree F
- Cooking spray or oil mister
- 1 bunch broccolini (6 oz)
- 3 tsp extra-virgin olive oil
- Kosher salt
- 3/4 c halved cherry tomatoes

- 4 flounder fillets (about 4 oz each)

Teriaki-Glazed Grilled Pork Chops w/Pineapple Salsa

- 1/4 c pineapple juice
- 4 tsp reduced-sodium soy sauce
- 1 lg garlic clove, crushed
- 1/2 tsp grated fresh ginger
- 5 boneless pork loin chops (4 oz each), trimmed of fat
- TERIYAKI SAUCE
- 1 tsp cornstarch
- 3 tbsp reduced sodium soy sauce
- 1/4 c pineapple juice
- 2 tbsp dark brown sugar
- 1/2 tsp grated fresh ginger
- 1 sm garlic clove, minced
- PINEAPPLE SALSA
- 1 1/3 c fresh pineapple, cut into 1/2-inch cubes
- 1 fresh jalapeno pepper, finely chopped
- 2 tbsp finely chopped red onion
- 1 tbsp finely chopped fresh cilantro
- Cooking spray or oil mister
Tandoori- Style Chicken Chops

- 1 cup plain nonfat yogurt
- 1 small onion, roughly chopped
- 1 piece (1-inch long) ginger root, peeled, roughly chopped
