Turkey Minestrone

In a large pot, cook bacon over med/high heat until crisp
- 4 slices bacon, chopped
- 1 medium onion, chopped
- 2 ribs celery, chopped
- 1 clove garlic, chopped
- 1 medium zucchini, diced
- 3 tablespoons tomato paste
- 2 cups cooked turkey, chunks
- 1 can cannellini beans, drained and rinsed
- 1 bay leaf
- 6 cups turkey or chicken stock
- 1 cup uncooked ditalini pasta
- 4 cups baby spinach, roughly chopped
- salt and pepper to taste
- 2 tablespoons grated Parmesan cheese and more for serving

- 1 cup Fresh Lime Juice
- 1 cup Fresh Strawberries, Roughly Chopped
- 4 ounces, fluid Blanco Tequila
- 1 ounce, fluid Grand Marnier
