- 1 10-oz. can diced tomatoes and green chiles
- (preferably Ro*Tel brand)
- 2 tbsp. lager-style beer (such as Corona)
- 2 tsp. ground cumin
- 1 tsp. chili powder
- 1 ⁄2 tsp. kosher salt
- 1 ⁄2 tsp. freshly ground black pepper
- 1 garlic clove, finely chopped
- 1 lb. Velveeta cheese, diced
- 1 ⁄4 cup grated aged Monterrey jack cheese
- 1 ⁄4 cup sliced scallions
- 1 ⁄4 cup chopped cilantro
- 1 plum tomato, seeded and chopped
- 1 jalapeno, stemmed, seeded, and finely chopped
- 1 ⁄2 lime
- Tortilla chips
Pasta Con Broccoli

Layered Banana Split Dessert

Preheat oven to 350 degrees F
- For the Crust:
- 1/2 cup (1 stick) of unsalted butter, softened at room temperature
- 1 cup of all purpose flour
- 1/4 cup of finely minced pecans
- First Layer:
- 1 (8 ounce) package of cream cheese, softened at room temperature
- 1 cup of powdered sugar
- 1 cup of Cool Whip or homemade whipped cream
- Remaining Layers in Order:
- 3 bananas, sliced
- 1 (20 ounce) can of crushed pineapple, very well drained
- 1 (21 ounce) can of strawberry or cherry pie filling
- Topping:
- 2 to 3 cups of Cool Whip or homemade whipped cream, plus extra for dollops as garnish, if desired
- Chocolate syrup, for garnish
- Chopped nuts, for garnish
- Maraschino cherries, with the stem, for garnish

Pork Tenderloin with Cranberry Sauce

Preheat oven to 325 degrees
- 2 pork tenderloins
- 2 Tablespoons of butter
- 3/4 cup chopped onion
- 1 can whole cranberry sauce
- 1/2 cup brown sugar packed
- 2/3 cups water
- 2 Tablespoons of lemon juice (you can leave this out)
- 1/3 cup of chili sauce
- 1/4 cup soy sauce
- 2 teaspoons prepared mustard
Broccoli Soup

Place steamed broccoli in a blender and blend until pureed
- 1 head broccoli, cut into florets and steamed
- 2 cups chicken broth, or more for thinning
- 1/2 cup heavy cream

Swedish Meatballs

Make the meatballs: put the breadcrumbs in a large bowl

- 1 cup breadcrumbs (I used unseasoned panko)
- 2 tbs unsalted butter
- 1/3 cup minced white onion
- 2 garlic cloves, minced
- 1/4 tsp ground allspice
- Kosher salt and freshly ground white pepper
- 1/2 cup milk
- 1 tsp Worcestershire sauce
- 3/4 lb lean ground beef
- 1/2 lb lean ground pork
- 1 large egg plus 1 egg white, beaten
- vegetable oil for brushing
- Gravy
- 2 tbs unsalted butter
- 2 tbs all-purpose flour
- 1 1/2 cups low-sodium beef broth
- 1 tsp Worcestershire sauce
- 1/4 cup heavy cream (I used light; it works great)
- Kosher salt and freshly ground black pepper
Southern Buttermilk Custard Pie

Preheat oven to 400°F. Beat the butter and sugar together until light
- 1/2 cup butter or margarine, melted
- 1 cup of granulated sugar
- 3 tablespoons flour
- 3 eggs, beaten
- 1 pinch salt
- 1 teaspoon vanilla extract
- 1 cup of fresh buttermilk
- 1 deep dish pie shell (either your own recipe or store bought)
- optional additions: 1/2 cup chopped pecans & 1/2 tsp. nutmeg
- Also, you can top this pie with a layer of Cool Whip or canned ReadyWip before serving it.
Hungarian Chocolate Frosting and Filling

- 1 cup confectioners’ sugar
- 2 Tbsp hot water

- 1 teaspoon ground cinnamon

- 2/3 cup packed brown sugar
