Aztec Cupcakes

Preheat oven to 350ºF. Line muffin pans with paper liners
- Cupcakes
- 2 cups all-purpose flour
- 1-1/2 cups sugar
- 1/2 cup brown sugar
- 1 teaspoon baking soda
- 1 teaspoon Durkee® Ground Cinnamon
- 1/4 teaspoon Durkee® Ground Nutmeg
- 1/4 cup cocoa powder
- 1 cup butter OR margarine
- 1 cup water
- 1/2 cup buttermilk
- 2 eggs
- 1 teaspoon Durkee® 100% Pure Vanilla Extract
- 1/2 teaspoon Durkee® Pure Almond Extract
- Frosting
- 6 tablespoons butter OR margarine
- 1/4 cup buttermilk
- 3 tablespoons cocoa powder
- 3 cups powdered sugar
- 1 teaspoon Durkee® 100% Pure Vanilla Extract
- 1/2 teaspoon Durkee® Pure Almond Extract
- 1/3 cup sliced almonds, toasted
Polvorones - Mexican Cookies

1 In a bowl, using an electric mixer on medium speed, beat together the butter and shortening until creamy
- 1/2 cup unsalted butter, at room temperature
- 1/2 cup vegetable shortening
- 2 1/2 cups sifted sifted confectioners' sugar (icing, very important that it is sifted)
- 1 teaspoon finely grated orange zest (next time I'll add 1/4 tsp. more)
- 1 tablespoon orange juice
- 2 cups unbleached all-purpose flour
- 2/3 cup ground walnuts
- 1/4 teaspoon sea salt
Mexican Cornbread

combine cornmeal, baking soda and salt in a large bowl
- 1 cup self-rising cornmeal
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1-1/2 cup (6 oz.) shredded cheddar cheese
- 1/2 cup chopped onion
- 1 cup milk
- 3 Tbsp bacon drippings
- 1 tsp garlic powder
- 3 eggs, beaten
- 7 oz. can whole kernel corn, drained
- 4 oz. can chopped green chilies, drained
- 1 Tbsp chopped jalapenos (optional)

- 1 small orange
- 8 cups cranberry raspberry drink
- 1/4 cup brown sugar -- packed
- 6 inches stick cinnamon
- 3 star anise
- 1 teaspoon whole cloves orange peel strips
Slow Cooker Pulled Pickled Beef Sandwiches

- 1 (24 oz.) jar Dill Pickle Spears with liquid
- 2 lb. chuck roast

- 24 jumbo pasta shells, cooked and drained

- 1/2 cup packed dark brown sugar
- 1/4 cup butter, softened
- 1 teaspoon maple flavoring

Baked Eggs in Hash Brown Cups

To Make Hash Brown Cups: Preheat the oven to 475 degrees and generously grease 6 jumbo muffin cups or ramekins
- For the Hash Brown Cups:
- 1 tablespoon butter, melted
- 3-1/2 - 4 cups frozen shredded hash browns, thawed
- 2 egg whites
- Salt, taste
- Pepper, to taste
- For Filling:
- 1 tablespoon olive oil
- 1 cup mushrooms, diced
- 1/2 sweet onion, diced
- 1/2 red pepper, diced
- 3/4 cup pepper jack or cheddar cheese
