Chicken Breasts with Bacon, Rosemary, and Lemon

Perfect choice for a quick weeknight meal
- 5 slices bacon, chopped
- 1/4 cup unbleached flour
- 4 boneless, skinless chicken breasts
- (6 to 8 oz each)
- Salt and Pepper
- 1 tablespoon butter
- 4 garlic cloves, sliced thin
- 1 tablespoon chopped fresh rosemary
- 1/8 teaspoon red pepper flakes
- 1 cup low sodium chicken broth
- 2 tablespoons fresh lemon juice
Strawberries & Peaches Cake

My favorite go to dessert, especially in the summer when the peaches and strawberries are fresh
- CAKE:
- 1 boxed package yellow cake mix
- 1 (4-ounce) package vanilla instant pudding and pie mix
- 4 eggs
- 1 cup water
- 1/3 cup vegetable oil
- FROSTING:
- 1 pint heavy cream
- 4 tablespoons sugar
- 1 teaspoon vanilla
- Freshly cut strawberries
- Canned sliced peaches in syrup, drained lightly
Favorite Meatloaf

Everyone has their own favorite version of meatloaf, this is ours
- 2 pounds meatloaf mix
- 2 large eggs
- 1/2 cup milk
- 1/2 teaspoon thyme or more if u like
- salt and pepper, bout 1 teaspoon each
- 2 teaspoons dijon mustard
- 2 teaspoons worcestershire sauce
- Garlic powder, sprinkling
- parsley, generous sprinkling, dried
- Grated locatelli cheese, small palmful
- Italian style breadcrumbs, enough to

Chili Rubbed Pork with Apricot Glaze

Delicious way to cook pork tenderloin
- SPICE RUB:
- 2 (1-pound each) pork tenderloins, fat trimmed
- 1 tablespoon chili powder
- 1 tablespoon garlic powder
- 1/2 tablespoon sugar
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
- GLAZE:
- 1 1/2 cups apricot jam or jelly
- 1/2 cup barbecue sauce
- 1 teaspoon grated fresh ginger or 1/2 teaspoon ground ginger
- 1/2 teaspoon garlic powder
- 1/2 teaspoon hot sauce
- 2 tablespoon fresh cilantro or parsley, chopped
- 2 small limes, juiced
Parmesan Chicken and Rice

Tasty one dish entree adapted from Cooking Light
- 1 tablespoon olive oil
- 1/2 cup chopped onion
- 1 teaspoon bottled minced garlic( I used 2 cloves minced fresh garlic)
- 1/2 teaspoon dried thyme
- 1 (8-ounce) package presliced mushrooms
- 3/4 pound skinless, boneless chicken breast, cut into bite-sized pieces
- 1/2 cup dry white wine
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1 cup uncooked instant rice
- 1 cup fat-free, less-sodium chicken broth
- 1/2 cup (2 ounces) grated fresh Parmesan cheese
- 1/4 cup chopped fresh parsley

Delicious creamy pineapple frosting with 2 layers of a madarin orange cake

- 1/2 cup vegetable oil

- 11 oz can mandarin oranges with juice
- Icing:
- 3.5 oz package vanilla instant pudding
- 1 container 8 oz cool whip
- 1 large can crushed pineapple, with a
- little juice
- 1/2 cup chopped toasted pecans,

Sausage, Pepper, and Onion Hoagies

- Ingredients
- 3/4 pound sweet Italian sausage
- 3/4 pound hot Italian sausage
- 2 tablespoons extra virgin olive oil, 2 turns of the pan
- 2 large cloves garlic, crushed
- 1 large onion, thinly sliced
- 4 cubanelle peppers (light green mild Italian peppers), seeded and thinly sliced
- 2 red bell pepper, seeded and thinly sliced
- Salt and pepper
- 2 or 3 jarred hot cherry peppers, banana peppers or pepperoncini, finely chopped
- 3 tablespoons hot pepper juice, from the jar
- 4 crusty, semolina submarine sandwich rolls, 8 inches, sesame seeded or plain
- 1 tablespoon extra-virgin olive oil
- 3 tablespoons butter
- 1 large clove garlic
- 1 1/2 teaspoons dried Italian seasoning, 1/2 a handful or 1/2 teaspoons each oregano, thyme, parsley
Creme Brulee Cheesecake Bars

Creme brulee meets cheesecake in this semi-homemade version of a Betty Crocker adapted recipe!
- 1 pouch (1 lb 1.5 oz) Betty Crocker® sugar cookie
- mix
- 1 box (4-serving size) French vanilla instant pudding
- and pie filling mix
- 2 tablespoons packed brown sugar
- 1/2 cup butter or margarine, melted
- 2 1/2 teaspoons vanilla
- 2 eggs plus 3 egg yolks
- 2 packages (8 oz each) cream cheese, softened
- 1/2 cup sour cream
- 1/2 cup sugar
- 2/3 cup toffee bits, finely crushed
Broccoli Pie

Delicious pie, perfect for lunch/brunch or as a hearty side dish for a special occasion
- 2 cups of cooked broccoli florets (I steam fresh broccoli in the microwave)
- 3 eggs
- 1 cup of whole milk
- 2 cups of cheddar, Jarlsberg, or Swiss cheese, (cubed or shredded)
- 1 package of Lipton vegetable soup mix
- 1 pastry crust, rolled out and fitted into a removable bottom tart pan
- (I used a frozen prepared pie crust, recommend deep dish)
