Molten Lava Cakes

Preheat oven to 425 degrees F
- 6 (1-ounce) squares bittersweet chocolate
- 2 (1-ounce) squares semisweet chocolate
- 10 tablespoons (1 1/4 stick) butter
- 1/2 cup all-purpose flour
- 1 1/2 cups confectioners' sugar
- 3 large eggs
- 3 egg yolks
- 1 teaspoon vanilla extract
- 2 tablespoons orange liqueur
Vegetable-Loaded Pasta Bake

1. Preheat oven to 350 degrees F
- 8 ounces dried whole wheat penne pasta (2 3/4 cups)
- 2 1/2 cups cauliflower florets (1/2 medium head)
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 2 medium carrots, sliced
- 1 stalk celery, chopped
- 12 ounces kale, stems removed, leaves torn (12 cups)
- 1/2 cup frozen peas
- 1/2 cup frozen whole kernel corn
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1/4 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1 cup fat-free milk
- 4 ounces extra-sharp cheddar cheese, shredded (1 cup)
- 2 tablespoons finely shredded or grated Parmesan cheese
Classic Macaroni Salad

Bring a large pot of lightly salted water to a boil
- 4 cups uncooked elbow macaroni
- 1 cup mayonnaise
- 1/4 cup distilled white vinegar
- 2/3 cup white sugar
- 2 1/2 tablespoons prepared yellow mustard
- 1 1/2 teaspoons salt
- 1/2 teaspoon ground black pepper
- 1 large onion, chopped
- 2 stalks celery, chopped
- 1 green bell pepper, seeded and chopped
- 1/4 cup grated carrot (optional)
- 2 tablespoons chopped pimento peppers (optional)
Baked French Toast

Spread mixture on bottom of 13 x 9 inch pan
- 1/2 c. butter, melted
- 1 1/2 c. brown sugar
- 1 t. cinnamon
- 8-12 slices of bread
- 2 c. milk
- 8-9 eggs
- dash of salt
Cheesy Potatoes with Smoked Sausage

Preheat oven to 350 deg. Lightly spray a 13 x 9 inch baking pan with non-stick cooking spray
- 1 package Hillshire Farm Smoked Sausage
- 1 bag (20 oz.) refrigerated shredded has brown potatoes
- 2 c. (8 oz.) shredded cheddar cheese
- 1 c. sour cream
- 1 medium onion, chopped
- 1/4 c. butter or margarine, melted
- 1/4 t. ground black pepper

- 2 roma tomatoes, diced
- 1 11 ounce package steamed ready-to-eat black-eyed peas, rinsed and drained; or one 15-ounce can black-eyed peas, rinsed and drained
- 1/4 cup seasoned rice vinegar

- 1 1/2 lb. boneless, skinless, chicken breasts
- 1/2 cup chopped onion

- 2 chicken bouillon cubes
- 1 cup hot water
- 1/2- 1 tsp gound cummin
- 2 cups half and half cream
- 2 cups shredded montery jack cheese
- 1 can, 16 oz. cream style corn
- 1 can, 4 oz. chopped green chillies, undrained
- 1 can rotel tomatoes

- 1 2 1/4 - 2 1/2 pound deli-roasted chicken, skinned, boned, and coarsely shredded

- 2 14 ounce can reduced-sodium chicken broth
- 1 1/2 cups milk
- 1 teaspoon bottled hot pepper sauce
- 1 1/2 cups mozzarella cheese (6 oz.)
- 1 1/4 cups crumbled blue cheese (5 oz.)
- 1/2 cup shredded Parmesan cheese (2 oz.)
