Heat the oven to 350 deg. Grease and flour two 8 1/2 x 4 1/2 x 2 1/2 inch loaf pans
- 1/2 lb. (2sticks) unsalted butter, at room temperature
- 2 1/2 c. granulated sugar, divided
- 4 extra-large eggs, at room temperature
- 1/3 c. grated orange zest (6 oranges)
- 3 c. all-purpose flour
- 1/2 t. baking powder
- 1/2 t. baking soda
- 1 t. kosher salt
- 3/4 cup freshly squeezed orange juice, divided
- 3/4 cup buttermilk, at room temperature
- 1 t. pure vanilla extract
- Glaze (optional)
- 2 c. confectioners' sugar, sifted
- 3 T. freshly squeezed orange juice
Emeril's Simple Braised Pot Roast with Vegetables

Preheat the oven to 325°F
- 4 pounds boneless beef chuck roast
- 2 teaspoons freshly ground black pepper
- 1 tablespoon plus 1 teaspoon kosher salt
- 2 tablespoons minced garlic
- 2 teaspoons minced fresh rosemary leaves
- 2 tablespoons vegetable oil
- 2 cups beef stock or canned low- sodium beef broth, plus more as needed
- One 12-ounce can cola soda
- 1 tablespoon tomato paste
- 2 medium onions, peeled and cut into 2- inch chunks
- 2 large Idaho potatoes, peeled and cut into 2- inch chunks
- 2 medium parsnips, peeled and cut into 2- inch chunks
- 2 medium carrots, peeled and cut on the bias into 2- inch chunks
- 3 celery ribs, cut on the bias into 2- inch chunks
- 2 1/2 tablespoons all- purpose flour

- 8 Lettuce leaves, cleaned and stemmed

Low-Fat White Chicken Chile

Combine 2 1/2 c. water, lemon pepper and cumin seed
- 1 t. lemon pepper
- 1 t. cumin seed (not ground)
- 3 boneless, skinless chicken breast halves
- 1 clove garlic, chopped
- 1 c. chpped onion
- 2 (8 oz.)cans white Shoepeg corn, drained
- 2 (4 oz.) chopped green chilies, undrained
- 1 t. ground cumin
- 2-3 T. lime juice
- 2 (14 oz.) white or great northern beans, undrained
- Tortilla chips
- Monterey Jack Cheese, shredded

- 1 packaged crescent rolls
- Whip:
- 8 oz. cream cheese
- 1/2 c. miracle whip
- 1/2 package Hidden Valley Ranch Dressing
- Generous Shake of seasoned salt
- 2 shakes Parsley
- Toppings:
- 1/3 c. onions
- 1/3 c. Red and green peppers
- 1/3 c. Celery
- 1/3 c. Broccoli
- 1/3 c. Cauliflower
- 1/3 c. Carrots

- 1 cup unbleached all purpose flour
- 1 tsp baking powder

- 6 tbsp unsalted butter, at room temperature
- 3/4 cup smooth all natural peanut butter, at room temperature
- 1/2 cup packed brown sugar
- 1/2 cup sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup whole milk
- 2 cups semi-sweet chocolate chips
- Peanut Butter Frosting
- 6 ounces unsalted butter, room temperature
- 1/2 cup confectioners' sugar
- 1/2 tsp salt
- 1 cup creamy peanut butter, natural (or if you want a smoother look, go not-natural)
- 1/2 tsp pure vanilla extract
- 1/2 cup whole milk
