Spiced German Pot Roast

Melt shortening in dutch over; brown meat over med heat, about 15 minutes
- 2 Tbsp. shortening
- 4 lb. beef chuck pot rast. (or top, bottom round or rump)
- 1 tsp. salt
- 1/2 tsp. pepper
- 1 cup water
- Spicy gravy--see below.
Apple Raisin French Toast Strata

Coat a 9x13 inch baking dish with cooking spray
- 1 (1 pound) loaf cinnamon raisin bread, cubed
- 1 (8 ounce) package cream cheese, diced
- 1 cup diced peeled apples
- 8 eggs
- 2 1/2 cups half-and-half cream
- 6 tablespoons butter, melted
- 1/4 cup maple syrup
lemon chicken soup with quinoa and kale

for a speedier version, substitute 2-3 cups cubed or shredded fully cooked chicken for the raw chicken
- 6 cups chicken broth, homemade or canned
- 1 1/2 lbs. boneless skinless chicken breast halves or chicken tenders.
- 2 tbsp. olive oil
- 3 ribs celery, diced (generous 1 cup)
- 2 orange or yellow carrots, ends trimmed, peeled, diced. (1 cup)
- 1 lg. onion, chopped, about 2 cups
- 1/2 cup white quinoa, rinsed
- 3 lg. eggs
- 1/2 cup freshly squeezed lemon juice, about 3 lemons
- 1/4 tsp. white pepper
- 2 cups baby kale or baby spinach leaves
- salt to tast
Easy Ham and Swiss Casserole

- 2 1/2 cups uncooked egg noodles
- 1 (10.75 ounce) can condensed cream of mushroom soup
- 1/2 cup white wine
- 1/4 cup water
- 2 cups chopped cooked ham
- 1/2 cup shredded Swiss cheese
- 1 cup seasoned stuffing mix (coarse-crumb style)
White Beans Provencal

This has a lot of ingredients, but, it goes together very quickly
- 2 Tbsp. extra-virgin olive oil
- 1 med onion, finely diced
- 3 stalks celery, trimmed and finely diced
- 1 lg. carrot, finely diced
- coarse salt and freshly cracked black pepper, to taste
- 2 cloves garlic, minced
- 2 mild pork or turkey sausages, removed from casings.
- 1 14oz. cans white beans, rinsed and drained
- 1 14oz can finely diced tomatoes
- 1/2 cup dry white wine
- 1 tsp. herbs of Provence or more to taste
- 1/2 tsp. minced fresh rosemary
- 1/2 tsp. lemon thyme leaves, stripped from stalk
- Best quality extra-virgin olive oil, to taste
- juice of 1 lemon
- freshly shaved parmesan to serve

Bread Pudding

Soak bread in milk for 1/2 hour
- 1 1/2 cups bread cubes
- 3 cups milk, scalded
- 2 eggs
- 1/2 cup sugar
- 1/4 tsp. salt
- 1/2 tsp cinnamon
- 1/4 tsp. ground nutmeg
- 1/2 cup seedless raisins
Berry Smoothie

- 4 c. frozen or fresh strawberries, blueberries, and/or raspberries.
- 2 c. 2% Greek yogurt
- 1/4 c. honey or agave nectar
- 1 tsp. vanilla
- pinch of salt.

- 1 c. spinach leaves, quartered
- 2 eggs,lightly beaten
- 2 green onions, chopped
- 4 c. chicken broth
- I tsp. Salt
- 2 Tbsp cold water
- I Tbsp. Cornstarch
Pasta with Feta, Black olives and tomatoes

- 1 lb. dried pasta--Penne, spaghetti, or linguine
- 1 Tbsp. olive oil
- 1/2 cup cured black olives, roughly chopped (kalamata)
- 1 cup chopped tomatoes or halved cherry tomatoes
- 1/2 cup feta cheese, crumbled soft sheep's milk.
- 1 tsp. ground black pepper
