Pork Belly (Jamie Oliver's from Food Network)

Preheat oven to 425. Place pork on a clean work surface, skin side upwards
- 3 lbs pork belly
- sea salt and freshly ground black pepper
- 2 red onions, halved
- 2 carrots, peeled and halved lengthwise
- 2 sticks of celery, chopped in half
- 1 bulb of garlic, slin on, broken into cloves
- a small bunch of fresh thyme, leaves picked
- 600 ml water or stock

In a large bowl, cream together butter and sugar until smooth
- 1 1/2 cups butter, softened
- 2 cups white sugar
- 4 eggs
- 1 tsp vanilla extract
- 5 cups flour
- 2 tsp baking powder
- 1 tsp salt
Skirt Steak with Creamed Corn & Poblanos

Roast the poblanos directly over a gas flame or under a broiler, turning, until charred all over
- 2 poblano chilies
- 1/4 cup extra virgin olive oil
- 1 medium onion, thinly sliced
- 1 1/2 cups fresh or thawed frozen corn kernels
- 1 cup sour cream
- salt & fresh ground pepper
- 1 1/2 lbs. skirt steak, cut into 6 inch pieces
Fresh Tomato-Basil Risotto with Mozzarella

Combine first 5 ingredients; stir well, and set aside
- 1 1/2 cups diced plum tomatoes
- 2 Tbsp chopped fresh basil
- 1 Tbsp olive oil
- 1/2 tsp salt
- 1 clove garlic, crushed
- 4 (10 1/2oz) cans low sodium chicken broth
- 2 tsp olive oil
- 1/2 cup finely chopped onion
- 1 1/2 cups Arborio or other short grain rice, uncooked
- 1/3 cup dry white wine
- 1/2 cup (2oz) diced part skim mozzarella cheese
- 1/2 tsp freshly ground pepper
- 2 Tbsp grated Parmesan cheese
Grilled Flatbreads with Tomato and Basil

Lightly spoon flour into dry measuring cups, level with a knife
- BREAD:
- 2 1/4 cups bread flour, divided
- 1/4 cup plus 2 Tbsp warm water (100 - 110 degrees), divided
- 1 pkg dry yeast (about 2 1/4 tsp)
- 1 Tbsp extra virgin olive oil
- 3/4 tsp salt
- 1 Tbsp bread flour
- cooking spray
- TOPPING:
- 2 Tbsp balsamic vinegar
- 1 Tbsp extra virgin olive oil
- 1/2 tsp salt
- 1/2 tsp freshly ground black pepper
- 2 garlic cloves, minced
- 4 cups (1/4 inch thick) slices plum tomatoes
- 1 cup finely chopped fresh basil
Beef Stock - Homemade

Heat the oven to 450 degrees
- 8 sprigs fresh flat leaf parsley
- 6 sprigs fresh thyme or 3/4 tsp dried thyme
- 4 sprgs fresh rosemary or 2 tsp dried rosemary
- 3 dried bay leaves
- 1 Tbsp whole black peppercorns
- 1 lb beef stew meat, cubed
- 6 lbs veal bones, sawed into small pieces
- 1 large onion, peel on, quartered
- 2 large carrots, cut into thirds
- 2 stalks celery, cut into thirds
- 2 cups dry red wine
Green Bean Casserole (Emily Made / Pioneer Woman)

Preheat oven to 350. Cut the green beans in half if you like the pieces to be a little smaller
- 2 lb fresh green beans, ends cut off
- salt
- 4 slices bacon, cut into 1/4 inch pieces
- 3 cloves garlic, minced
- 1 red bell pepper, diced
- 1/2 whole large onion, chopped
- 4 Tbsp (1/2 stick butter)
- 4 Tbsp all purpose flour
- 2 1/2 cups whole milk, plus extra for thinning if needed
- 1/2 cup half and half
- freshly ground black pepper
- 1/8 tsp cayenne pepper
- 1 cup grated sharp Cheddar
- 1 cup panko breadcrumbs
Tuna Twist Casserole

- 1 cup prepared Alfredo sauce
- 2 eggs
- 1 clove garlic, finely chopped
- 1/4 cup green onions
- 4 cups cooked noodles
- 1 pkg (10oz) frozen chopped broccoli, thawed & drained
- 1 large can tuna, drained
- 1 cup seasoned croutons
Peach Lemonade Slush (Mel Gallagher)

In blender, mix first four ingredients
- 1 can 12oz frozen lemonade
- 3 fresh peaches - leave skin on, but remove pit and stem
- 1/3 can of water (use lemonade can)
- couple of handfuls of ice
- Add 1-2oz of vodka & 1oz of peach schnapps (or so)
Grilled Peach and Feta Salad

- 4 peaches (not white)
- 3 green onions, sliced
- 1/4 cup chopped fresh cilantro
- 3 Tbsp honey
- 1/2 tsp salt
- 1 tsp lime zest
- 1/2 cup fresh lime juice
- 3/4 tsp ground cumin
- 3/4 tsp chili powder
- 1 1/2 Tbsp tequila (optional)
- 1/3 cup olive oil
- vegetable cooking spray
- 8 cups Bibb lettuce (6oz 1-2 heads of lettuce)
- 1/4 cup crumbled feta cheese
- 1.4 cup pecans
- Garnish: Fresh cilantro sprigs
