Grandma's Cheesecake

Blend first four ingredients together and pour over crust
- 3 8oz pkgs cream cheese
- 5 eggs
- 1 cup sugar
- 1 tsp vanilla
- 1/2 cup sugar
- 1 1/2 pints sour cream
- graham cracker crust
Southern Oven Unfried Chicken

Preheat oven to 400. In a bowl, combine buttermilk and hot sauce
- 1 cup buttermilk
- 1 Tbsp hot sauce
- 4 skinless boneless chicken breasts
- 1 1/2 cups whole wheat or regular panko bread crumbs
- 3 Tbsp parmesan cheese
- 1 1/2 tsp onion powder
- 2 tsp black pepper
- 1 tsp cayenne pepper
- 1 tsp paprika
- olive oil spray
Chunky Tomato Basil Soup (Pillsbury)

In 3 qt saucepan, heat butter over medium high heat
- 2 Tbsp butter or margarine
- 1 medium onion, chopped (1/2 cup)
- 3 small carrots, shredded (1 cup)
- 2 Tbsp all purpose flour
- 1 cup half and half
- 1 jar (26oz) chunky tomato pasta sauce
- 1 can (14.5oz) diced tomatoes, undrained
- 8 oz unsalted chicken broth
- 1/4 cup chopped fresh basil leaves
Crispy Oven Baked Fish

Heat oven to 400. Line cookie sheet with foil; generously spray foil with nonstick cooking spray
- Nonstick cooking spray
- 1 egg white
- 1 tsp water
- 1/3 Progresso Italian Style Bread Crumbs
- 1/2 tsp lemon pepper seasoning
- 1/4 tsp garlic salt
- 2 (3 to 4oz) cod, catfish, orange roughy or striped bass fillets
- 4 lemon wedges
Glazed Carrots with Pistachios (great for holidays)

Preheat oven to 350. Trim carrots, leaving about 1/2 inch tops
- 3 lbs small carrots with tops
- 3 cups water
- 1/4 tsp salt
- 1/2 cup shelled unsalted pistachios
- 1/2 cup butter (no substitutes)
- 1/3 cup packed brown sugar
- 1 1/2 tsp snipped fresh thyme
Granola Topped Pear Crisp

Place pears in large bowl, sprinkle with cornstarch and toss to coat
- Topping:
- 4 medium pears, peeled and thinly sliced
- 2 Tbsp cornstarch
- 1/2 cup peach preserves, warmed
- 1/3 cup all purpose flour
- 1/3 cup sugar
- 3/4 tsp ground cinnamon
- 1/4 tsp salt
- 1/8 tsp ground nutmeg
- 3 Tbsp cold butter
- 1 cup granola with fruit and nuts
Maple Whipped Sweet Potatoes

For the sweet potatoes, preheat oven to 375
- 4 sweet potatoes, about 2 1/2 lbs total weight, unpeeled
- 2 Tbsp sour cream
- 1 Tbsp unsalted butter, at room temperature
- 2 Tbsp pure maple syrup
- salt and freshly ground black pepper
- HAZELNUT BROWN BUTTER
- 4 Tbsp unsalted butter
- 1/4 cup chopped hazelnuts
- 1 small shallot, minced
- 2 Tbsp finely chopped fresh flat leaf parsley

- 1 15.25oz pkg mint cream Oreos
- 8 oz cream cheese, softened to room temperature
- 12 oz high quality semi sweet chocolate
- Optional: sprinkles and green candy melts

- 20 Kraft caramels, unwrapped
