Lemon Parsley New Potatoes

- 2 1/4 lbs new potatoes (15 to 18 small)
- 3 Tbsp margarine or butter
- 1 Tbsp chopped fresh parsley
- 1 tsp grated lemon peel
- 1/4 tsp salt
- 1/8 tsp pepper
Apple and Poppy Seed Slaw

- 2 cups shredded green cabbage (about 1 small head)
- 1 1/2 cups shredded red cabbage (about 1 small head)
- 1/2 cup shredded carrot
- 1 Granny Smith apple, julienned
- 4 green onions, thinly sliced
- 2 Tbsp mayo
- 3 Tbsp olive oil
- 1 Tbsp apple cider vinegar
- Juice of 1 lemon
- 1 Tbsp poppy seeds
- Kosher salt and freshly ground pepper, to taste
Broccoli and Cheddar Frittata

NOTE: I used asparagus and added small ham cubes
- 4 large eggs
- 4 large egg whites
- 2 Tbsp water
- 2 tsp olive oil
- 1 small red onion, cut in half, then thinly sliced into half moons
- 2 cups chopped cooked or thawed frozen broccoli
- 1/4 tsp salt
- Freshly ground black pepper to taste
- 2 oz extra sharp cheddar cheese, shredded (1/2 cup)
Chicken Cacciatore with Linguine (Crockpot)

NOTE: Add more pepper & salt I use fresh button mushrooms - might want to use large mushrooms
- 2 1/2 lb boneless skinless chicken thighs (about 12)
- 1 jar (4.5oz) sliced mushrooms, drained
- 2 cans (6oz) Italian style tomato paste
- 1 3/4 cups no salt chicken stock (from 32oz carton)
- 1/2 cup white wine, if desired
- 1 1/2 tsp dried basil leaves
- 1/2 tsp salt
- 1 dried bay leaf
- 12 oz uncooked lintguine
- 1/4 tsp dried thyme leaves
- 1 Tbsp cornstarch
- Shredded Parmesan Cheese, if desired
Tuna Casserole

- 1 7oz pkg (1 1/2 cups) uncooked elbow macaroni
- 1 cup milk
- 4 oz (1 cup) shredded reduced fat cheddar cheese
- 1 10 3/4oz can condensed reduced fat cream of mushroom soup
- 1 6 1/8oz can tuna, drained, flaked (used one fresh steak & pan grilled on
- stove top)
- 1 4oz can mushroom pieces and stems, drained
- 1 Tbsp instant minced onion
- 1 tsp dry mustard
- 1 cup frozen peas
- 1/2 cup crushed potato chips
Honey Grilled Chicken Sandwich

- 2 boneless skinless chicken breast halves
- 4 tsp fat free mayo or salad dressing

- 2 medium whole wheat buns, split
- 2 lettuce leaves
White and Green Beans

- 1 lb. green beans, cut into 1 to 1 1/2 inch pieces
- 2 Tbsp butter or margarine, melted
- 1 Tbsp lemon juice
- 2 tsp Dijon mustard
- 2 tsp honey
- 1/2 tsp lemon pepper
- 1/4 tsp salt
- 1 can (15 to 16 ounces) great northern or navy beans, rinsed and drained
Slow Cooker Easy French Dip Sandwiches (Pillsbury)

Spray 3 - 4 qt slow cooker with cooking spray
- 1 (3lb) fresh beef brisket (not corned beef)
- 1 pkg (1oz) onion recipe and dip soup mix (from 2oz box)
- 1 can (10 1/2oz) condensed beef broth
- 8 mini baguettes or sandwich buns
- NOTE: This seemed a little salty - probably because of the soup mix. Check and see what seasonings are in it and maybe make your own.
Spiced Pinto Beans with Chorizo

In a medium saucepan, heat the olive oil until shimmering
- 1 Tbsp extra virgin olive oil
- 1 small onion, finely diced
- 1 garlic clove, minced
- 1/2 tsp ground cumin
- 1/4 tsp chipolte powder
- 1/2 lb fresh Mexican chorizo or hot italian sausage, casings removed
- one 15oz can pinto beans, with their liquid
- 2 Tbsp water
- salt and freshly ground pepper
- 1 cup fried pork rinds, coarsely chopped, for garnish
Strawberry Spinach Salad with Yogurt Poppy Seed Dressing

- 1/4 tsp poppy seed
- SALAD:
- 1 1/2 cups torn spinach salad
- 1 cup sliced strawberries
