Beef Stew (Susan Pitcher from Paul Lynde)

preheat oven to 250 degrees
- 3 lbs stew meat, cut into 1 inch cubes
- 1 16oz pkg fresh baby carrots
- 1 large onion, diced
- 1 15oz can tomatoes
- 1 15oz can peas, drained
- 1 15oz can green beans, drained
- 1 15oz can small whole potatoes, drained (I quarter potatoes)
- 1 10 1/4oz can beef consommé (only use 1/2 can)
- 1/4 cup quick cooking tapioca
- 1 Tbsp brown sugar
- 1/2 cup fine dry breadcrumbs
- 2 bay leaves
- 1/2 cup dry white wine
- salt and pepper
Traditional Cheesecake

In a small bowl, combine the cracker crumbs and sugar; cut in butter until crumbly (mine was a ball)
- CRUST:
- 1 1/2 cup graham cracker crumbs
- 2 Tbsp suggar
- 4 Tbsp cold butter
- FILLING:
- 4 8oz pkgs cream cheese, softened
- 1 1/4 cups sugar
- 1 Tbsp lemon juice
- 2 tsp vanilla
- 3 eggs, beaten
- SOUR CREAM TOPPING:
- 1 pint sour cream
- 3/4 cup sugar
- RASPBERRY SAUCE:
- 2/3 cup sugar
- 4 tsp cornstarch
- 2 1/2 cup fresh or frozen raspberries
- 2 tsp lemon juice
- 3/4 tsp vanilla
- 1/2 tsp lemon juice
- Mix all ingredients together
Cordon Bleu Casserole

Arrange chicken in 13x9x2 inch cooking spray, place over medium high heat until hot
- 4 (4oz) skinned, boned chicken breast halves
- butter flavored vegetable cooking spray
- 3 (1oz) slices reduced fat, low salt ham, cut in half
- 3 (1 1/2oz) slices reduced fat swiss cheese, cut in half
- 2 cups sliced fresh mushrooms
- 1 (10 1/4oz) can reduced fat, reduced sodium cream of mushroom soup
- 3 Tbsp dry sherry
- 1 1/2 cups reduced sodium chicken flavored stuffing mix
Potato Packet with Bleu Cheese (Grilled)

GRILL RECIPE - need to prepare outdoor grill for covered direct grilling over medium heat
- 3 Tbsp butter, melted (sometimes use olive oil)
- 1/2 tsp salt
- 1/4 tsp ground black pepper
- 3 large baking potatoes (about 12 oz) each cut lengthwise into 8 wedges
- 1 large heavy duty foil cooking bag
- 1/2 cup crumbled bleu cheese (can use feta or gruyere)
- 1 Tbsp chopped fresh parsley leaves
Cauliflower Ham AuGratin

- 4 cups partially cooked fresh cauliflower or 2 pkg (10oz each) frozen
- cauliflower thawed & well drained
- 2 cups chopped fully cooked smoked ham
- 1 can (11oz) condensed cheddar cheese soup
- 1/4 cup milk
- 2/3 cups Bisquick baking mix
- 2 Tbsp firm margarine or butter
- 2 Tbsp shredded Cheddar cheese
- 1/2 tsp ground nutmeg
Ham Stuffed Jumbo Shells

- 24 jumbo pasta shells
- 3 Tbsp all purpose flour
- 2 cups 1% milk
- 1/2 lb fresh mushrooms, halved and sliced
- 1/2 cup chopped onion
- 1/2 cup chopped red pepper
- 1 tsp canola oil
- 3 cups cubed fully cooked lean ham
- 1 cup (4oz) shredded reduced fat swiss cheese, divided
- 3 Tbsp grated parmesan cheese
- 2 Tbsp minced fresh parsley
- 1/4 tsp paprika
Southwestern Chicken Casserole

Sprinkle salt, pepper and garlic powder evenly over chicken
- 1 tsp salt
- 1/2 tsp ground black pepper
- 1/4 tsp garlic powder
- 1 1/2 lbs boneless, skinless chicken breasts, cut into bite size pieces
- 1/4 cup butter or margarine
- 1 cup finely chopped fresh broccoli flowerets
- 1 lb. process cheese, cut into pieces
- 1 can (10oz) diced tomatoes and green chilies
- 4 cups cooked rice
- sour cream to serve
Tuscan Roasted Asparagus

Preheat oven to 350 and melt butter in a 13x9 baking dish
- 2 Tbsp butter
- 1 lb asparagus, cleaned & trimmed
- 2 Tbsp finely chopped onion
- 2 Tbsp finely chopped celery
- 2 medium tomatoes, sliced
- 1/2 tsp basil leaves
- 1/2 tsp thyme leaves
- 1/4 tsp pepper
- 3 Tbsp grated parmesan cheese
Vegetable Frittata

NOTE: I also added small ham cubes
- 1 Tbsp olive oil
- 1 medium onion, chopped
- 1 medium zucchini, halved lengthwise & cut into 1/4 inch thick slices
- 1 small red bell pepper, coarsely chopped
- 6 eggs
- 1/4 cup milk
- 1 Tbsp Basil
- 2 medium plum tomatoes, sliced (used cherry tomatoes & cut in half)
- 1 cup shredded mozzarella cheese
15 Minute Chicken ala King

In small bowl, with wirer whisk, stir together light sour cream and flour until smooth; set aside
- 1 can light sour cream
- 2 Tbsp all purpose flour
- 3 cups frozen broccoli, carrots, water chestnuts and red pepper vegetable mix
- 1/4 lb deli cooked chicken or turkey breast, cubed
- 1 10 1/2 can condensed chicken broth
- salt and pepper
- 3 thick English muffins, split, toasted
