Scalloped Potatoes & Ham

- 3 Tbsp margarine or butter
- 3 Tbsp all purpose flour
- 1/2 tsp salt
- 1/4 tsp pepper
- 2 1/2 cups milk
- 6 cups thinly sliced potatoes (about 6 medium)
- 1 small oinion, finely chopped (about 1/4 cup)
- 1 1/2 cups cubed fully cooked smoked ham
- 1 Tbsp margarine or butter
Tangerine Butter Cookies (BHG)

In a very large bowl, beat butter with an electric mixer on medium to high speed for 30 seconds
- 3/4 3/4 3/4 cup butter, softened
- 1 1/2 1 1/2 1/2 cups sugar
- 1 1/2 1 1/2 1/2 tsp baking soda
- 1 1/2 1 1/2 1/2 tsp cream of tartar
- 1 1 1 tsp salt
- 2 2 2 eggs
- 2 2 2 tsp finely shredded tangerine peel or orange peel
- 1 1 1 tsp vanilla
- 1 1 1 tsp orange extract
- 3/4 3/4 3/4 cup olive oil
- 1/2 1/2 1/2 cup white cornmeal
- 4 4 4 cups all purpose flour
- 1/2 1/2 1/2 cup sugar
Tuscan Pasta With Tomato-Basil Cream

Prepare pasta according to package directions
- 1 (20oz) pkg refrigerated four cheese ravioli
- 1 (160z) jar sun dried tomato Alfredo sauce
- 2 Tbsp white wine
- 2 medium size fresh tomatoes, chopped (1 14.5oz) can petite diced tomatoes,
- fully drained can be substituted
- 1/2 cup chopped fresh basil (dried basil - use 1/4 cup)
- 1/2 cup grated parmesan cheese
- GARNISH: fresh basil strips
Chicken Divan Soup

Coat a dutch oven with cooking spray, place over medium high heat until hot
- vegetable cooking spray
- 1 1/4 lbs skinned, boned chicken breasts, cut into bite size pieces
- 1/4 cup chopped onion
- 2 cloves garlic, minced
- 1 cup cooked long grain rice (cooked without salt or fat)
- 1/2 tsp pepper
- 1/4 tsp salt
- 2 (4oz) cans sliced mushrooms, drained
- 1 (16oz) pkg frozen chopped broccoli, thawed
- 1 (14 1/4oz) can no salt added chicken broth
- 1 (12oz) can evaporated skimmed milk
- 1 (10 1/4oz) can reduced fat reduced sodium cream of chicken soup, undiluted
Spiced Fruit Salad

In a small bowl, combine the yogurt, brown sugar, cinnamon and nutmeg
- 1 1/2 cup fat free plain yogurt
- 1/4 cup packed brown sugar
- 1/4 tsp ground cinnamon
- 1/8 tsp ground nutmeg
- 2 pounds ripe banana (about 3 medium), sliced
- 1 pound apples (about 2 medium), cubed
- 1 Tbsp lemon juice
- 1 pound red and/or green seedless grapes
Hearty Beef & Macaroni Dinner

- 3/4 lb lean ground beef round
- 2 cups chopped onions
- 1/2 cup chopped bell pepper
- 1 914.5 oz) can diced tomatoes, undrained
- 4 oz (1 cup) uncooked elbow macaroni
- 1 cup hot water
- 1/2 cup ketchup
- 1/2 tsp salt
- 1/2 tsp dried Italian seasoning
- NOTE: I like to add frozen or a can of corn in the final steps.
Lasagna (Slow Cooker)

I added garlic and onion powder to meat while cooking - also Italian seasoning
- 1 lb ground beef
- 1 jar (2oz) spaghetti sauce
- 1 cup water
- 1 container (15oz) ricotta cheese
- 1 pkg (7oz) 2% milk shredded mozzarella cheese, divided
- 1/4 cup grated parmesan cheese, divided
- 1 egg
- 2 Tbsp chopped fresh parsley
- 6 lasagna noodles, uncooked
Lucious Lemon Cheesecake

In a bowl, combine crumbs, nuts and sugar, stir in butter
- CRUST
- 1 1/4 cups graham cracker crumbs (about 20 squares)
- 3/4 cup finely chopped nuts
- 1/4 cup sugar
- 1/3 cup butter or margarine, melted
- FILLING
- 4 pkgs (8oz each) cream cheese, softened
- 1 1/4 cup sugar
- 4 eggs
- 1 Tbsp lemon juice
- 2 tsp grated lemon peel
- 1 tsp vanilla extract
- TOPPING
- 2 cups (16oz) sour cream
- 1/4 cup sugar
- 1 tsp grated lemon peel
- 1 tsp vanilla extract
Cider Pork Stew with Cheddar Dumplings

- 1 cup water
- 3 medium sweet potatoes, peeled, cut into 1/2 inch cubes (3 cups)
- 2 medium red baking apples, unpeeled, cut into 1/2 inch cubes (2 cups)
- 1 cup cut green onions (1/2 inch long)
- 2 Tbsp water
- DUMPLINGS
- 1 cup all purpose flour
- 1 1/2 tsp baking powder
- 1/4 tsp salt
- 2/3 cup buttermilk
- 1 oz (1/4 cup) shredded cheddar cheese
- 1 Tbsp chopped fresh parsley

- 1 lb unpeeled small potatoes (6-8), cut into 1 inch pieces (3 cups)
- 2 cups ready to eat baby cut carrots
- 1 cup frozen small whole onions (from 1 lb bag), thawed
- 6 boneless skinless chicken thigh (1 1/4lb)
- 1/2 tsp salt
- 1/8 tsp pepper
- 1 jar (12oz) chicken gravy
- 1 1/2 cup Green Giant frozen peas, thawed
