Mini Key Lime Cupcakes

Special Touch: check the market for seasonal fresh key limes in bag & juice them
- Topping: 1 box (4 serving size) instant vanilla pudding & pie filling
- Mix 1 1/2 cup whipping cream, 1/4 cup key lime or regular lime juice, 4 drops green food coloring, 1 1/2 cup powdered sugar
- Cupcakes: 48 regular size paper baking cups, 1 box Betty Crocker Super Moist yellow cake mix, water, vegetable oil, eggs called for in cake mix box
- Frosting: 1 container (12 oz) Better Crocker whipped fluffy white frosting, 1 Tbsp key lime or regular lime juice, 1/2 tsp grated key lime or regular lime peel
Quick Lemon Poppy Seed Bread

Preheat oven to 350. Grease and flour 2 8x4 inch loaf pans
- 1 18.25 oz pkg lemon cake mix
- 4 eggs
- 1/2 cup vegetable oil
- 1 3 oz pkg instant lemon pudding mix
- 1 cup water
- 1/4 cup poppy seed
Southern Peach Yam Bake

Boil yams in salt water. Peel when done
- 1/2 cup brown sugar
- 3 Tbsp flour
- 1 1/2 tsp nutmeg
- 2 Tbsp butter
- 4 large yams
- 1/2 cup chopped pecans
- 16 oz can sliced peaches, drained
- 1 1/2 cup or whatever it takes to cover it - mini marshmallows
Fried Smashed Potatoes with Lemons

For the potatoes. Put the potatoes in an 8 qt stockpot with enough cold water to cover by at least 2 inches
- DRESSING:
- 2 lbs baby or fingerling potatoes
- 1/4 cup olive oil, plus extra as needed
- 3 cloves garlic, peeled and halved
- 3 Tbsp olive oil
- 3 Tbsp fresh lemon juice
- 2 Tbsp chopped fresh parsley leaves
- 1 Tbsp chopped fresh thyme leaves
- 2 lemons, zested
- kosher salt and fresly ground black pepper
Strawberry Tarts

Combine the flour,s ugar,a nd salt in a small bowl and place in the freezer for 30 minutres
- PASTRY CREAM:
- 1/1 /4 cups all purpose flour
- 3 Tbsp sugar
- 1/2 tsp kosher salt
- 6 Tbsp (3/4 stick) cold unsalted butter, diced
- 2 Tbsp cold shortening (recommend Crisco)
- 1/4 cup ice water
- 2 cups pastry cream, recipe follows
- 1/3 cup apricot jelly
- 3 tbsp shelled pistachios, halved, optional
- 5 extra large egg yolks, room temp
- 3/4 cup sugar
- 3 Tbsp cornstarch
- 1 1/2 cups scalded milk
- 1/2 tsp pure vanilla extract
- 1 tsp cognac
- 1 Tbsp unsalted butter
- 1 Tbsp heavy cream
Half Hour Chicken Gumbo

in a 5qt dutch oven or heavy bottomed pot, heat oil over medium
- 3 Tbsp vegetable oil, such as safflower
- 1/3 cup all purpose flour
- 2 red bell peppers (ribs and seeds removed) chopped
- 1 medium onion, chopped
- 4 garlic cloves, chopped
- 1 tsp dried oregano
- coarse salt and ground pepper
- 1 pkg (10oz) frozen cut okra
- 8 oz smoked (precooked) andouille sausage, halved lengthwise and sliced 1
- inch thick
- 1 rotisserie chicken (about 2 1/2 lbs) skin and bones removed

- Salad Ingredients: Grilled Apple Chicken:
- 3/4 cup sugar 3/4 cup unsweetened apple juice or
- 1 tsp salt apple cider
- 1 tsp dry mustard 1/3 cup lemon juice
- 1/3 cup red wine vinegar 3 Tbsp honey
- 1 cup vegetable oil 1/4 tsp garlic powder
- 1 tsp onion juice 1/4 tsp ground ginger
- 1 Tbsp poppy seed (optional) 4 1/2 tsp canola oil
- 1 cup sliced almonds 6 boneless chicken breast
- 6 cup torn fresh spinach
- 1 quart strawberries, sliced
- 2 cups grapes, sliced
- 3 cups chopped cooked chicken

- 1/4 cup vegetable oil
- 1 tsp vanilla extract
- FROSTING
- 1 cup butter, softened
- 1/3 cup mashed banana
- 1 tsp lemon juice
- 2 Tbsp dark brown sugar
- 5 cups powdered sugar, sifted
- 1 Tbsp dark rum
- 1/2 tsp vanilla extract
- 1/4 tsp cinnamon
- PRALINE SAUCE
- 1/4 cup butter
- 1/2 cup packed light brown sugar
- 1/2 tsp cinnamon
- Tbsp dark rum
- 2 Tbsp praline liqueur (or substitute maple syrup)
- 1/4 tsp salt
- 1 banana, sliced
Creole Chicken & Sausage (Slow Cooker)

- OPTIONAL EXTRAS:
- 1 1/2 lb bonless skinless chicken breast
- 12oz smoked Andouille sausage, cut into small rounds
- 1 cup chopped onions
- 2 cloves minced garlic
- 1 1/4 cup low sodium chicken broth
- 1 can (14.5 oz) diced tomatoes
- 3 Tbsp tomato paste
- 1/2 cup tomato sauce
- 2 tsp Creole seasoning
- 1/4 tsp cayenne
- 1 tBSP BROWN SUGAR
- 1 14OZ CAN BLACK BEANS, RINSED & DRAINED
- 2 GREEN BELL PEPPERS, CHOPPED
- 1/2 CUP SLICED GREEN ONIONS FOR TOPPING
- 2 tBSP ALMOND BUTTER (RADOMLY DELICIOUS)
- SALT TO TASTE
- Brown Rice for Serving
