Citrus Chicken Salad

Combine all ingredients and refrigerate before serving
- 2 (12 1/2oz) cans chicken, drained
- 1 cup celery, chopped
- 1 (11oz) can mandarin oranges, drained
- 1 small can pineapple tidbits, drained
- 1/2 cup walnuts or pecans, chopped
- 1/2 tsp salt
- 3/4 cup miracle whip or mayonnaise

- 2 1/2 lbs. potatoes - thinly sliced
- 1 onion - thinly sliced
- 1/2 cup Jarlsburg Cheese - shredded
- 1/2 cup Cheddar Cheese - shredded
- 1/4 cup Parmesan Cheese - shredded
- 1 cup milk

- 2 8oz fresh or frozen lobster tails
- 1/3 cup finely chopped celery
- 1/3 cup mayonnaise
- 1 Tbsp lemon juice
- 1 3oz thinly sliced pancetta or bacon, chopped
- 4 6inch pieces baguette french bread, halfed lengthwise or 4 hoagie or brat

- 4 large butterhead or red butterhead lettuce leaves

- 1/2 cup cilantro leaves
- 3/4 cup sour cream (reduced fat)
- 2 Tbsp fresh lime juice
- 2 Tbsp extra virgin olive oil

- 1 small red cabbage or napa cabbage (1 1/2 lbs.) finely shredded
- 2 pickld jalapenos (thinly sliced)
- 2 scallions (thinly sliced)

- 1 lb fresh tuna steaks (about 3/4 inch thick)
- 1/2 cup fresh lime juice
- 1/2 cup sherry vinegar
- 2 tsp ground cumin
- 1/4 tsp granulated sea salt
- pinch ground black pepper
- pinch cayenne pepper
- 1 Tbsp honey
- 2 cups extra virgin olive oil
- SLAW:
- 2 cups shredded or finely sliced Napa cabbage
- 1/2 cup shredded carrots
- 1/2 cup julienne English cucumber (from peeled, seeded cucumber)
- 1/2 cup julienne red bell pepper
- 1/4 cup chopped green onions
- 1/4 cup chopped cilantro
- CHIPOTLE AIOLI
- 3 Tbsp chipotle chiles (from canned in adobo sauce)
- 1/2 cup chopped cilantro
- 2 Tbsp chopped scallions, white & little green part

- 3 lbs boneless beef chuck, cut to 1 inch cubes
- 1 cup red cooking wine
- 2 cups chicken broth
- 1/2 cup tomato sauce
- 1/4 cup soy sauce
- 1/4 cup flour
- 3 garlic cloves, finely chopped
- 5 medium carrots, sliced
- 1 lb baby potatoes (tri color?)
- 8 oz fresh mushrooms, sliced
- fresh chopped parsley for garnish
Spinach & Strawberry Salad with Feta Cheese & Balsamic Vinaigrette

Whisk vinegar and olive oil in small bowl
- 1 (5-7oz) pkg baby spinach or baby romaine
- 2 cups sliced strawberries
- 1/2 cup crumbled goat or feta cheese
- 1/4 cup pine nuts, toasted
- Balsamic Vinaigrette
- 1 Tbsp balsamic vinegar
- 1 Tbs extra virgin olive oil
- 1 Tbsp chopped fresh basil leaves or 1 tsp dried basil, crushed
- salt and pepper
