Iced Apple Bars

Mix together 1 cup unsweetened applesauce, 1 cup sugar and 1/2 cup shortening
- Bars: Icing:
- 1 cup unsweetened applesauce 1 1/2 cup powdered sugar
- 1 cup sugar 2 Tbsp butter or margarine
- 1/2 cup shortening 1 or 2 Tbsp warm milk (just enough
- 2 cups flour to make icing spread easily)
- 1 tsp soda 1/2 tsp vanilla
- 1 1/2 tsp cinnamon
- 1 tsp nutmeg
- 1/8 tsp cloves
- 1/4 tsp salt
- 1 cup raisins
- 1/2 cup chopped nuts
- 1 tsp vanilla
Glazed Carrots with Pistachios

Preheat ove to 350. Trim carrots, leaving about 1/2 inch tops
- Start to Finish: 25 Minutes Makes: 10 Servings
- 3 lbs. small carrots with tops
- 3 cups water
- 1/4 tsp salt
- 1/2 cup shelled unsalted pistachios
- 1/2 cup butter (no substitute)
- 1/3 cup packed brown sugar
- 1 1/2 tsp snipped fresh thyme
Grilled Caramel Apples

- 2 large apples
- 1/4 cup caramel topping
Potato Cheese Soup

In dutch oven, combine first six ingredients
- 4 cups water
- 2 1/2 cups reduced sodium chicken or vegetable broth
- 5 cups diced peeled potatoes
- 2 large carrots, finely chopped
- 1 large onion, finely chopped
- 2 Tbsp low sodium chicken bouillon granules or 6 vegetable bouillon cubes
- 2 celery ribs, finely chopped
- 1 large sweet red pepper, finely chopped
- 4 oz reduced fat process cheeses (Velveeta), cubed
- 1/3 cup reduced fat mayonnaise
- 2 cups (8oz) shredded reduced fat cheddar cheese
- 1/2 cup reduced fat swiss cheese
- 1/4 cup mashed potato flakes
- 1/4 tsp pepper
Grilled Shrimp with Cilantro, Lime and Peanuts

I served the shrimp with Pecan Pilaf Rice
- 2 limes
- 2 tsp fish sauce
- 1/2 tsp sugar
- 1 lb (about 15) jumbo shrimp, shells on
- 2 tsp safflower oil
- coarse salt and freshly ground pepper
- 1 1/2 cups coarsely chopped fresh cilantro
- 1/2 cup salted peanuts, coarsely chopped
- 2 scallions, finely chopped
Celery Seed Dressing

Combine sugar, mustard, salt onion, and vinegar in blender or food processor
- 1/2 cup sugar
- 1 tsp. salt
- 1/3 cup cider vinegar
- 1 Tbsp celery seed
- 1 tsp dry mustard
- 1/4 medium onion, grated

- 1 1/2 cups graham cracker crumbs
- 1 (14oz) can Eagle Brand Sweetened Condense Milk (NOT evaporated milk)
- 1 cup (6oz) semi-sweet chocolate chips
- 1 cup(6oz)pkg butterscotch flavored chips

Black Bean & Corn Salsa

- 1/4 cup Mayo
- 2 Tbsp lime juice
- 1/2 tsp ground cumin
- 1 can (15 to 19oz) black beans, rinsed and drained
- 1 can (11oz) whole kernel corn, drained or whole kernel corn w/peppers
- 1 cup quartered grape tomatoes or cherry tomatoes (halved or quartered)
- 1/2 cup chopped red onions
- 2 Tbsp chopped fresh cilantro
- 1 tsp chopped jalapeno pepper (optional)
Pork Chops with Pear Maple Sauce

Topping would be good with ham or pork tenderloin
- 4 boneless pork loin chops, cut 3/4 inch thick (about 1 lb)
- 1/2 tsp each salt, pepper
- 1 Tbsp olive oil
- 1/4 cup butter
- 3 Tbsp maple syrup
- 3 Tbsp peach, apricot or plum preserves or jam
- 1/2 tsp dried basil, crushed
- 3 pears, cored and thinly sliced
