Buttermilk Oven "Fried" Chicken

NOTE: This needs to marinate for 6-8 hours (Preferably overnight)
- CHICKEN INGREDIENTS:
- 8 Chicken Drumsticks (about 3 1/2oz each), skinned
- 1/2 tsp kosher salt
- 1/2 tsp sweet paprika
- 1/2 tsp poultry seasoning
- 1/4 tsp garlic powder
- 1/8 tsp freshly ground black pepper
- 1 cup buttermilk
- Juice of 1/2 lemon
- Cooking spray or oil mister coating
- COATING INGREDIENTS:
- 2/3 cup panko bread crumbs
- 1/2 cup crushed conflake crumbs
- 2 Tbsp grated Parmesan cheese
- 1 1/2 tsp kosher salt
- 1 tsp dried parsley flakes
- 1 1/2 tsp sweet paprika
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- 1/4 tsp chili powder
Country Fried Steak with Brown Gravy

Cut the steak into 4 pieces
- GRAVY:
- 1 lb boneless beef round steak, 3/4 inch thick and trimmed
- 3 Tbs all purpose flour
- 1 tsp dry mustard
- 1/4 tsp salt
- 1/8 tsp ground red pepper (cayenne)
- 2 Tbsp vegetable oil
- 2 cups sliced fresh mushrooms
- 1 Tbsp all purpose flour
- 3/4 cup lower sodium beef broth
- 1/3 cup dry red wine or tomato juice
- 1 tsp lower sodium worchestershire sauce
- 1/4 tsp ground sage
- dash ground red pepper (cayenne)
Bow-Ties with Chicken & Asparagus

NOTE: I also made it with peas and brown rice instead of the pasta and asparagus
- 4 cups uncooked bow-tie pasta or 2 cups uncooked rice
- 1 lb fresh asparagus spears
- 1 Tbsp canola oil
- 1/2 stick butter
- 1 lb boneless skinless chicken breasts, cut into 1 inch pieces
- 1 pkg(8oz) sliced fresh mushrooms(3 cups)I used 4oz white/4oz baby bella
- 2 cloves garlic, finely chopped
- 1 cup reduced sodium chicken broth (from 32oz carton)
- 1 Tbsp cornstarch
- 4 medium green onions, sliced (1/4 cup)
- 2 Tbsp chopped fresh basil leaves
- salt, if desired
- 1/4 cup finely shredded Parmesan cheese (1 oz)
Cream Cheese and Pumpkin Muffins

- 1 pkg (3oz) cream cheese, softened
- 1 Tbsp sugar
- 1 Tbsp milk
- MUFFIN:
- 2 eggs, slightly beaten
- 1/2 cup canned pumpkin
- 1/2 cup milk
- 1/4 cup vegetable oil
- 1 1/2 cups all purpose flour
- 1/3 cup sugar
- 3 tsp baking powder
- 1 1/4 tsp ground cinnamon
- 1/2 tsp salt
- 1/4 tsp ground nutmeg

Winter Fruit Salad with Lemon Poppy Seed Dressing

- DRESSING:
- 1/2 cup sugar
- 2 tsp finely chopped onion
- 1/2 tsp salt
- 1/3 cup lemon juice
- 1 tsp dijon mustard
- 2/3 cup vegetable oil
- 1 Tbsp poppy seed
- SALAD:
- 1 large head romaine lettuce, torn into bite size pieces (about 10 cups)
- 1 cup shredded swiss cheese (4oz)
- 1 cup cashews
- 1/4 cup sweetened dried cranberries
- 1 medium apple, cubed (1 cup)
- 1 medium pear, cubed (1 cup)
Turkey Stock (Martha Stewart)

Combine all ingredients in a large stockpot and bring to a boil
- Neck and heart from a 14 lb turkey, and/or 1 lb. turkey wings
- 10 cups cold water
- 1 carrot, cut into 2 or 3 pieces
- 1 onion, cut into 2 or 3 pieces
- 1 stalk celery, cut into 2 or 3 pieces
- Small handful of flat leaf parsley sprigs and stems
- 1 bay leaf
- 5 whole black peppercorns

- 2 1/4 cups sugar, divided
- 2 eggs
- 1/2 cup molasses
- 4 cups all purpose flour
- 2 tsp baking soda
- 2 tsp ground cinnamon
- 2 tsp ground cloves
- 2 tsp ground ginger

Crustless Pumpkin Pie

- 3/4 cup sugar
- 1/2 cup bisquick
- 1 16oz can solid pumpkin
- 2 1/2 tsp pumpkin pie spice
- 2 tsp vanilla
- 2 eggs
- 1 13oz can evaporated milk
Swiss Steak

- 1/4 cup all purpose flour
- 1/4 tsp pepper
- 1 1/2 lbs. round steak, trimmed
- 1 Tbsp cooking oil

- 1 cup chopped onion
- 1/2 lb. fresh mushrooms, sliced
- 1 cup water
- 1 garlic clove, minced
- 1 Tbsp steak sauce
