- 4 chicken drumsticks (about 1 lb)
- Herb Marinade
- 1/2 cup vegetable oil
- 1/2 cup lime juice
- 2 Tbsp chopped fresh or 2 tsp dried basil leaves
- 2 Tbsp chopped fresh or 2 tsp dried oregano leaves
- 2 Tbsp chopped fresh or 2 tsp dried thyme leaves

Perfect Pot Roast (Pioneeer Woman)

Preheat oven to 275. Generously salt and pepper the chuck roast
- salt and freshly ground black pepper
- One 3 - 5lb chuck roast
- 2 or 3 Tbsp olive oil
- 2 whole onions, peeled and halved
- 6 - 8 whole carrots, unpeeled, cut into 2 inch pieces
- 1 cup red wine, optional
- 3 cups beef broth
- 2 or 3 springs fresh rosemary (I added dried)
- 2 or 3 sprigs fresh thyme (I added dried)
- NOTE: I added garlic powder to the meat and in the broth

Place 1/4 cup warm water in a large bowl
- 1 1/4 cups warm water (105F - 115F)
- 1 envelope (.25oz) active dry yeast
- 1 tsp sugar
- 1 Tbsp olive oil
- 1 tsp salt
- 3 1/2 cups all purpose flour
- 2 tsp cornmeal
- 1 cup pizza sauce
- Assorted Toppings: pepperoni, sausage, peppers and/or mushrooms
- 2 cups shredded mozzarella cheese
Orange Roughy Parmesan

Preheat broiler. Place fillets on a greased pan
- 2 lb. orange roughy fillets
- 2 Tbsp lemon juice
- 1/2 cup granted parmesan cheese
- 1/4 cup butter or margarine, softened
- 3 Tbsp mayonnaise

- 1/2 tsp salt

- 1/2 cup minced fresh parsley

Bean & Ham Hock Soup (Underwood Recipe)

REMINDER: Need to soak the beans the evening before
- Small bone-in ham shank, cut into 2-3 pieces (freeze part you don't use)
- Don't use the pre-cut ham cubes - they don't have the fat for flavor
- Hurst Great Northern Beans (comes with little seasoning packet)

In a large salad bowl, combine broccoli, cauliflower, bacon, onion, tomatoes and eggs; set aside
- 1 bunch broccoli, separated into florets
- 1 head cauliflower, separated into florets
- 8 bacon strips, fried and crumbled
- 1/3 cup chopped onion
- 1 cup chopped seeded tomatoes
- 2 hard cooked eggs, sliced
- 1 cup mayo or salad dressing
- 1/3 cup sugar
- 2 Tbsp vinegar
