Pork Gyros with Yogurt Tomato Sauce, Red Onion and Spinach

Whisk together the oil, wine, garlic and oregano in a baking dish
- 1/4 cup olive oil
- 1/4 cup dry red wine
- 4 cloves garlic, chopped
- 1 Tbsp finely chopped fresh oregano leaves
- 2 pounds pork tenderloin
- kosher salt and freshly ground black pepper
- 4 pita pockets
- 1 1/2 cups baby spinach
- 1/2 red onion, thinly sliced
- 1 plum tomato, seeded and diced
- YOGURT TOMATO SAUCE (1 1/2 cups)
- 1 pint Greek yogurt

- 1/4 cup finely grated peeled cucumber

- 4 medium zucchini

- 1 cup fresh lemon juice (about 6 lemons)
- 4 large eggs plus large yolks, beaten
- 1/4 cup finely grated lemon peel (about 3 lemons)
- 1 1/2 sticks (6oz) unsalted butter, cut into pieces
