Peach Lemonade Slush

Put all ingredients in blender and blend smooth
- 1 can 12oz frozen lemonade
- 3 fresh peaches - leave skin on, but remove pit and stem
- 1/3 can of water (use lemonade can)
- couple of handfuls of ice
- Add: 1-2oz of vodka and 1oz of peach schnapps....or so
Dump Cake Recipe

NOTE: Can also use chocolate cake mix, canned cherries and nuts or use pineapple with coconut and nuts
- 1 30oz can fruit cocktail or any fruit (or 2 15oz cans) (DO NOT DRAIN)
- 1 yellow or chocolate cake mix
- 1 stick butter (melted)

Ham Stuffed Jumbo Shells

- 24 jumbo pasta shells
- 3 Tbsp all purpose flour
- 2 cups 1% milk
- 1/2 lb fresh mushrooms, halved and sliced
- 1/2 cup chopped onion
- 1/2 cup red pepper
- 1 Tbsp canola oil
- 3 cups cubed fully cooked lean ham
- 1 cup (4oz) shredded reduced fat Swiss cheese, divided
- 3 Tbsp grated Parmesan cheese
- 2 Tbsp minced fresh parsley
- 1/4 tsp paprika
Roasted Pork Tenderloin with Sweet Potatoes & Pears

- 1 pork tenderloin (1 to 1 1/4 lb)
- 2 tsp chopped fresh rosemary leaves
- 1/2 tsp salt
- 1/2 tsp dried sage leaves, crushed
- 1/4 tsp coarse ground black pepper
- 1 large dark orange sweet potato (abou8t 1 lb), peeled, cut into 1 1/2
- inch pieces
- 2 firm ripe small pears, unpeeled, each cut into 6 wedges
- 1 medium sweet onion, halved crosswise, cut into thin wedges
- 1 Tbsp olive oil
- Fresh sage leaves, if desired
Oven Fried Parmesan Chicken

Suggestion: Maybe add a little more oregano or even other herbs
- 1/2 cup refrigerated or frozen egg product, thawed, or 2 eggs, beaten
- 1/4 cup fat free milk
- 3/4 cup grated parmesan cheese
- 3/4 cup fine dry bread crumbs
- 2 tsp dried oregano, crushed
- 1 tsp paprika
- 1/4 tsp ground black pepper
- 5 lbs. meaty chicken pieces, skinned (breast halves, thighs, and drumsticks)
- 1/4 cup butter or margarine, melted
- snipped fresh oregano (optional)
Chicken Littlee Stuffed Eggs (Easter)

Place eggs in medium saucepan; cover with cold water
- 8 eggs
- 5 drops blue, red or green food color, if desired
- 2 Tbsp mayo
- 1 Tbsp hot dog relish

Clean the seeds and pulp out of the tomatoes and cut into small pieces
- Heirloom & plum tomatoes - clean out all seeds and pulp
- fresh mozzarella - cut into small pieces
- french bread/baguette - cut into thin slices
Vegetable Soup

Heat olive oil in a large pot over medium heat
- 2 1/2 Tbsp olive oil
- 1 1/2 cups chopped yellow onion (1 medium)
- 2 cups peeled and chopped carrots (about 4)
- 1 1/4 cups chopped celery (about 3)
- 4 cloves garlic, minced
- 4 (14.5oz) cans low sodium chicken broth or vegetable broth
- 1 (14.5oz0 cans diced tomatoes (undrained)
- 3 cups peeled and 1/2 inch thick diced potatoes (from about 3 medium)
- 1/3 cup chopped fresh parsley
- 2 bay leaves
- 1/2 tsp dried thyme
- salt and freshly ground black pepper
- 1 1/2 cups chopped fresh or frozen green beans
- 1 1/4 cups frozen or fresh corn
- 1 cup frozen or fresh peas
- NOTE: Could also add mushrooms and/or cabbage
Yogurt Poppy Seed Dressing

- 1 cup plain Greek or plain yogurt
- 2 Tbsp honey
- 2 Tbsp fresh lemon juice
- 1 tsp poppy seeds
Low Carb Meatball Casserole

Preheat oven to 400. Spray a casserole dish with cooking spray
- Meatballs
- 1 lb ground beef
- 1 lb spicy pork sausage
- 1 cup shredded mozzarella
- 1/3 cup grated or shredded parmesan
- 1/2 cup crushed pork rinds (substitute for breading)
- 2 eggs
- 2 tsp onion powder
- 2 tsp fresh minced garlic
- 1/2 tsp Italian Seasoning blend
- Casserole Topping
- Low Carb Red Sauce Spaghetti or Marinara
- 2 cups cheese for the top of the casserole
- fresh basil for a topping
