Apple Topped Chops

In a large skillet, coated with nonstick cooking spray, brown pork chops over medium heat
- 6 loin pork chops (3/4 inch thick), trimmed
- 1 medium onion, thinly sliced into rings
- 1/2 cup raisins, divided
- 3 medium apples, cut into 1/2 inch slices
- 1 cup apple juice
- 1 Tbsp brown sugar
- 1/2 tsp dried basil
- 1/4 tsp ground nutmeg
- 1/8 tsp ground cloves
Spring Chicken & Biscuits

Preheat oven to 450. In medium bowl, mix baking mix and 1/3 cup milk until just combined
- 1 cup plus 2 Tbsp all purpose baking mix (not with buttermilk)
- 1/3 cup plus 1/4 cup reduced fat (2%) milk
- 4 medium skinless boneless chicken breast halves (1 1/2lbs)
- salt and pepper
- 5 tsp olive oil
- 2 medium carrots, chopped
- 1 small onion (4-6oz), chopped
- 1 stalk celery, chopped
- 1 cup reduced sodium chicken broth
- 2 Tbsp cornstarch
- 1 cup frozen peas, thawed
- 1 Tbsp chopped fresh dill plus additional sprigs for garnish
- 2 tsp fresh lemon juice
Easy Chicken Stroganoff

- 2 Tbsp margarine or butter
- 1 lb skinless, boneless chicken breasts, cut into strips
- 2 cups sliced fresh mushrooms (about 6 ounces)
- 1 medium onion, chopped (about 1/2 cup)
- 1 can (10 1/4 oz) Campbell's condensed Cream of Chicken Soup
- 1/2 cup sour cream or plain yogurt
- 4 cups hot cooked medium egg noodles (about 4 cups dry)
- Chopped fresh parsley, paprika, orange peel curls and fresh oregano sprigs for garnish
Reese's Peanut Butter Blondies

Preheat oven to 350. Grease an 8 x 11 inch pan with cooking spray or butter
- 1 1/2 sticks unsalted butter, softened
- 1/2 cup peanut butter
- 1 cup sugar
- 1/2 cup brown sugar
- 2 eggs
- 2 tsp vanilla extract
- 2 cup floour
- 1 tsp salt
- 1 tsp baking soda
- 27 Reese's miniatures, unwrapped
- 1/2 cup peanut butter, melted
Pork and Pineapple Kebobs

Served with brown fried rice
- 1 (3/4 lb) pork tenderloin
- 1 1/2 Tbsp brown sugar
- 1 1/2 Tbsp low sodium soy sauce
- 1 Tbsp orange juice
- 1 Tbsp grated fresh onion
- 2 tsp lemon juice
- 1/8 tsp salt
- dash of black pepper
- 1 bay leaf
- 10 (1 inch) cubes fresh pineapple
- 10 91 inch) pieces red bell pepper

Grilled Chili-Lime Chicken

I added canned chilies and it didn't have any pepper flavor
- 2 tsp grated lime peel
- 1/4 cup lime juice
- 1/4 cup olive or vegetable oil
- 2 Tbsp chopped fresh cilantro
- 1/2 tsp sugar
- 1/2 tsp salt
- 1 small jalapeno chile, seeded, finely chopped
- 1 clove garlic, finely chopped
- 4 boneless skinless chicken breasts (1 1/4lb)
Saucy Peas and New Potatoes

Cut any large potatoes in half
- 1 lb tiny new potatoes
- 1 (10oz) pkg frozen peas
- 1 cup evaporated skimmed milk or low fat (1% milkfat) milk
- 1 Tbsp all purpose flour
- 1/4 tsp salt
- 1/8 tsp ground nutmeg
- dash black pepper
Tortellini Vegetable Toss

Combine tomato and water in small bowl; cover and let stand 15 minutes
- 1 Tbsp Sun Dried Tomatoes
- 1/4 cup hot water
- 1/4 lb. fresh asparagus (9 spears)
- 1/4 cup julienne sliced zucchini
- 1/4 cup julienne sliced carrot
- 1/2 tsp minced garlic
- 3 oz refer cheese tortellini, uncooked
- 2 Tbsp warm canned low sodium chicken broth, undiluted
- 1/4 tsp olive oil
- dash salt and fresh ground black pepper
- 1 1/2 tsp freshly grated romano cheese
- NOTE: I usually add some sliced and sauteed smoked sausage to the dish and also some dried basil to the sauce
Baked Ham with Molasses Crumb Topping

Preheat the oven to 325. Score the top of the ham into diamonds
- 1 boneless cooked lower sodium ham (3 lbs)
- 2 Tbsp butter or margarine
- 1 Tbsp firmly packed light brown sugar
- 1 Tbsp molasses
- 1 sp prepared mustard
- 1/4 cup fine dry bread crumbs
Ham and Vegetable Stuffed Potatoes with Cheddar

- 4 large baking potatoes (10 to 12 oz each)
- 4 oz thinly sliced extra lean cooked ham, chopped
- 1 cup chopped onions
- 1 1/2 cups Green Gian Frozen Cut Green Beans, thawed
- 1 8oz can Green Giant Mushroom Pieces and Stems, drained
- 1/2 cup ready to serve fat free chicken broth with 1/3 less sodium
- 1/2 tsp dried thyme leaves
- 2 oz (1/2 cup) shredded reduced fat sharp cheddar cheese
