- 6 medium scallions, minced
- 1/2 cup minced mint leaves

Roasted Paprika Chicken

- 1 medium Gala apple, cored & cut into 1 inch chunks
- 2 Tbsp dried cranberries
- 2 Tbsp balsamic vinegar
- 1 Tbsp honey
