- DRESSING:
- 1/3 cup cider vinegar
- 1/4 cup lemon juice
- 3 Tbsp water
- 1 Tbsp olive oil
- 1 Tbsp plus 1 1/2 tsp Dijon mustard
- 2 1/2 tsp sugar
- 1 tsp minced garlic
- 1/2 tsp pepper
- 1 tsp dried basil
- 1 tsp dried oregano
- SALAD:
- 1 lb cooked pasta of your choice (used rigatoni)
- chopped vegetables of your choice (used the following)
- 1 cup cherry tomatoes (cut in half)
- 4 baby cucumbers - sliced
- 5 green onions - sliced both green & white
- 1 cup shredded carrots
- 1 zucchini - cut in quarters and sliced
- 1 yellow squash - cut in quarters and sliced
- 1/2 red bell pepper - cut in large diced pieces

Crumble flour and margarine together
- 1 1/2 cups flour
- 1 1/2 sticks margarine
- 2 (8oz) cream cheese
- 2 cups powdered sugar
- 3 cups whipped topping
- 3 boxes (4oz each) instant lemon pudding
- 5 cups milk
Pumpkin Whip

In a mixing bowl, beat pudding and milk until well blended, aabout 1-2 minutes
- 1 pkg (3.4oz) instant butterscotch pudding mix
- 1 1/2 cups cold skim milk
- 1 cup canned or cooked pumpkin
- 1 tsp pumpkin pie spice
- 1 1/2 cups light whipped topping
Pork Chops in Country Onion Gravy

- 4 (4oz) boneless pork chops, trimmed of fat
- 2 cups chopped onions
- 1 cup beef broth
- 1/8 tsp pepper
- 1/3 cup skim milk
- 2 Tbsp flour
Roasted Paprika Chicken

Preheat oven to 425. Stir together first 5 ingredients, forming a paste
- 1/4 cups smoked paprika
- 2 Tbsp chopped fresh thyme
- 3 Tbsp extra virgin olive oil
- 2 tsp kosher salt
- 1 tsp coarsely ground pepper
- 5 lb skin-on, bone-in chicken thighs and breasts
- 2 lemons, thinly sliced
Pumpkin Cobbler

Mix together pumpkin, brown sugar, evaporated milk, eggs, ginger, and salt
- 1 large can pumpkin
- 1 cup brown sugar, packed
- 1 large can evaporated milk (Pet or Carnation)
- 3 eggs
- 1 tsp ginger or 1/2 tsp cinnamon and 1/2 tsp ginger
- 1/2 tsp salt
- 1 yellow cake mix (Pillsbury pudding in the mix)
- 1 1/2 sticks butter
- 1 cup nuts
Hearty Beef & Macaroni Dinner

- 3/4 lb lean ground beef round
- 2 cups chopped onions
- 1/2 cup chopped red pepper
- 1 (14.5oz) can diced tomatoes, undrained
- 4 oz (1 cup) uncooked elbow macaroni
- 1 cup hot water
- 1/2 tsp salt
- 1/2 tsp dried Italian seasoning
Cherry (Blueberry) Crumble Slab Pie

Heat oven to 400. Place both pie crusts in half sheet pan, overlapping slightly
- Crust:
- 1 box Pillsbury refrigerated pie crusts, softened as directed on box
- Filling:
- 2 lb fresh or frozen cherries or blueberries
- 1/2 cup granulated sugar
- 3 Tbsp cornstarch
- 1/4 tsp ground cinnamon
- grated peel of 1 lemon
- Topping:
- 1 cup all purpose flour
- 1/4 cup packed brown sugar
- 1/2 tsp ground cinnamon
- 1/4 tsp salt
- 5 Tbsp butter melted and cooled
- NOTE: It would be great to add some chopped pecans or walnuts to the topping mixture
Pumpkin Butter (Crockpot)

In a 3 qt or larger slow cooker add all the ingredients and stir
- 1 (29oz) and 1 (15oz) cans pumpkin puree
- 2 1/2 cups brown sugar
- 2 cups apple cider
- 1 tsp ground nutmeg
- 1/4 tsp ground cloves
- 1/8 tsp ground ginger
- dash of salt
- 1/4 tsp allspice
- 1/2 tsp ground cinnamon
- 1/2 tsp vanilla paste or the seeds of 1/2 a vanilla bean
Strawberry Spinach Salad

Toss together red onion and next 4 ingredients in a large bowl
- 1/4 red onion, thinly sliced
- 2 (6oz) bags baby spinach
- 1 (16oz) container strawberries, quartered
- 1 (4oz) pkg crumbled blue cheese
- 1/2 cup sliced toasted almonds
- bottled red wine vinaigrette
- salt and freshly ground pepper to taste
