Shrimp & Sausage Gumbo (Southern Living)

- 1 lb smoked spicy hot sausage - cut into 1/2 inch thick slices
- 1/2 cup salted butter
- 1/2 cup all purpose flour
- 2 medium size yellow onions, chopped (about 3 cups)
- 1 large red pepper, chopped (about 1 1/2 cups)
- 3 large celery stalks, chopped (about 1 cup)
- 3 garlic cloves, minced
- 2 (32oz) cartons chicken broth
- 1 lb. fresh okra, trimmed and cut into 1/2 inch pieces (about 2 3/4 cups)
- 1 (14.5oz) can petite diced tomatoes, undrained
- 3 bay leaves
- 2 tsp salt
- 2 tsp Worcestershire sauce
- 2 tsp hot sauce
- 1 1/2 tsp dried thyme
- 1 tsp black pepper
- 2 lb unpeeled raw medium shrimp, peeled and deveined
- 1/4 cup chopped fresh flat leaf parsley
- hot cooked rice
- sliced scallions, file powder (optional)
Asparagus, Sausage and Orzo Skillet

Heat the oil in a 10 inch regular or cast iron skillet over medium high heat
- 2 Tbsp olive oil
- 8 oz fully cooked hot Italian sausage, cut into 1/2 inch thick rounds
- 1 bunch asparagus, cut
- kosher salt
- freshly ground black pepper
- 2 cloves garlic, minced
- 1 cup orzo pasta (about 8 ounces)
- 2 1/2 cups low sodium chicken broth
- 1/2 cup grated parmesan, plus more for serving
Golden Oreo Truffles (No Bake)

Making Truffles First crush Oreos by placing in food processor
- 8 oz cream cheese (not softened)
- 1 family size package of Golden Oreos, finely crushed
- 8-10 oz of baking chocolate (or candy melts)
- 1-2 tsp vegetable oil

Romaine & Strawberry Salad

Combine romaine lettuce, strawberry halves, chopped onion, and toasted almonds; toss gently
- 2 cups torn romaine lettuce
- 1/2 cup halved fresh strawberries
- 1 Tbsp coarsely chopped purple onion
- 1 Tbsp slivered almonds, toasted
- 1 Tbsp honey
- 1 Tbsp balsamic vinegar

- 3/4 cup water
- 1/4 cup butter or margarine
- 2 garlic cloves, minced
- 1 Tbsp finely chopped fresh parsley
Apple Pie with Crumb Topping (Susan Pitcher)

Preheat oven to 425. Sift together sugar, flour, nutmeg and cinnamon over the cut up apples and mix well
- 5 medium to large apples (I only use Granny Smith Apples), peel and cut up apples
- 3/4 cup sugar less 1 Tbsp.
- 1/4 cup all purpose flour
- 1/2 tsp nutmeg
- 1/2 tsp cinnamon
- dash of salt (I cut up 2 apples and very lightly sprinkle salt, then cut remaining apples and very lightly sprinkle with salt)
- 2 Tbsp butter or margarine (I use slightly less)
- CRUMB TOPPING
- 1/2 cup sugar
- 1/2 cup flour
- 1/4 cup room temperature butter (I always use butter for the topping)
Tequila Lime Chicken with Avocado-Black Bean Salsa

Combine tequila, lime juice, sugar, salt, oil and pepper in large bowl
- SALSA:
- 1/3 cup tequila (can substitute orange juice for tequila)
- 1/3 cup lime juice
- 1 Tbsp sugar
- 1/2 tsp salt
- 2 Tbsp vegetable oil
- 1/2 tsp fresh ground black pepper
- 6 chicken breasts, skinned, boned (about 5oz each)
- 15 oz black beans (drained & rinsed)
- 1 hass avocado (finely chopped)
- 6 radishes (finely chopped)
- 6 scallions (finely chopped)
- 1/4 cup fresh lime juice
- 1/8 cup chopped cilantro
- 1/4 cup vegetable oil
- 2 serrano chiles (minced)
- 1/2 tsp salt (needed)

Spray 12 inch skillet with nonstick cooking spray
- 1 1/2 lbs beef boneless sirloin steak
- 3 cups 2inch pieces asparagus (about 1 pound)
- 1 cup sliced onions (about 2 medium)
- 1 1/2 cups beef broth
- 4 cups cooked farfalle (bowtie shape) pasta
- 1 cup tomato puree
- 3 Tbsp chopped fresh or 1 Tbsp dried basil leaves
- 3 Tbsp chopped sun dried tomatoes (not oil backed)
- 1/4 tsp pepper
- 2 Tbsp freshly grated parmesan cheese
