Mango Chili Glazed Grilled Shrimp

- 1 large mango
- 1/4 cup fresh mint leaves
- 1 tsp lime zest
- 4 Tbsp fresh lime juice
- 2 Tbsp bottled sweet chili sauce
- 1 Tbsp grated fresh ginger
- 2 garlic cloves, minced
- 1 tsp dried crushed red pepper
- 1 tsp olive oil
- 1/2 tsp kosher salt
- 1/2 tsp freshly ground black pepper
- 2 lb. peeled & deveined large raw shrimp
Cajun Sausage & Cream Cheese Stuffed Mushrooms

Wipe off or wash mushrooms in cold water
- 24 oz, white button mushrooms
- 1/3 lb pork sausage (regular or hot)
- 1/2 medium onion, finely diced
- 4 cloves garlic, finely minced
- 8 oz cream cheese
- 1/2 cup grated parmesan cheese
- 1/3 cup shredded cheddar cheese
- 2 tsp Cajun seasoning
- OPTIONAL GARNISH: Green onions or parsley (don't add until after the stuffed mushrooms are baked or the garnish will burn)
Chicken Wild Rice Soup (Susan Brown)

In a large saucepan, combine the first nine ingredients
- 2 qts chicken broth
- 1/2 lb fresh mushrooms, chopped
- 1 cup finely chopped celery
- 1 cup shredded carrots (Susan omits these)
- 1/2 cup finely chopped onions
- 1 tsp chicken bouillon granuales (Susan uses Better Than Bouillon)
- 1 tsp dried parsley flakes
- 1/4 tsp garlic powder
- 1/4 tsp dried thyme
- 1/4 cup butter or margarine
- 1/4 cup all purpose flour
- 1 can (10 3/4 oz) condensed cream of chicken soup, undiluted
- 1/2 cup dry white wine or additional chicken broth
- 3 cups cooked wild rice
- 2 cups cubed cooked chicken
Corn and Bacon Soup with Jalapeno Crema

Set a box grater in a wide, shallow bowl and coarsely grate 6 ears of corn; you should have 2 cups of grated corn
- 10 Medium Ears of Corn, Shucked
- 3 Tbsp extra virgin olive oil
- 2 oz lean bacon, finely diced (1/2 cup)
- 1 celery rib, finely diced
- 1/2 cup finely diced onion
- 1/2 cup finely diced yellow bell pepper
- 3 cups whole milk
- 1 1/2 cups heavy cream
- kosher salt
- pinch of cayenne pepper
- 1/4 cup sour cream
- 1 jalapeno, seeded and minced
- 2 Tbsp chopped cilantro, plus cilantro leaves, for garnish
- 1/2 tsp fresh lemon juice
- freshly ground white pepper
Individual Chicken Pot Pie

Combine soup, water, and poultry seasoning in a medium bowl; stir well
- 1 (10 3/4oz) can low sodium cream of chicken soup, undiluted
- 1 cup water
- 3/4 tsp poultry seasoning
- 2 cups diced cooked chicken breast
- 1 (10oz)pkg frozen mixed vegetables, thawed
- 3/4 cup sliced fresh mushrooms
- vegetable cooking spray
- 3/4 cup self rising flour
- 1 Tbsp margarine
- 1/4 cup plus 2 Tbsp skim milk
Black Bean and Corn Quesadillas

NOTE: Didn't add cheese in mixture - just put some tortilla, then mixture and then more cheese
- 2 Tbsp vegetable oil
- 1 red onion, diced
- 3 garlic cloves, minced
- 1 tsp salt
- 3 1/2 cups fresh or frozen corn kernels
- 1 can (15 oz) black beans, drained and rinsed
- 2 tomatoes, chopped
- 1 lb monterey jack cheese, shredded
- 6 oz cotija or feta cheese, shredded
- 2 - 3 jalapenos, seeded and diced
- 2 Tbsp chopped fresh cilantro
- 12 flour tortillas
- sour cream for serving
- salsa for serving
Super Quick Cherry Crisp

- 1 can cherry pie filling
- 6 Tbsp melted margarine
- 3/4 cup brown sugar
- 3/4 cup quick oats
- 1/2 cup flour

Jumbo Molasses Cookies

- 4 cups sugar
- 1 cup molasses
- 4 eggs
- 8 cups all purpose flour
- 2 Tbsp plus 2 tsp baking soda
- 2 tsp ground cinnamon
- 1 tsp salt
- 1 tsp ground cloves
- 1 tsp ground ginger

Braised Short Ribs

Preheat oven to 325. Season ribs with salt and pepper
- 6 lbs boneless short ribs, trimmed
- coarse salt and freshly ground pepper
- 1/4 cup olive oil
- 3 large onions (9 oz each), halved lengthwise and cut crosswise into 1/4
- inch slices
- 6 garlic cloves, finely chopped
- 1/3 cup packed dark brown sugar
- 1 1/2 cup red wine
- 1 1/2 cups low sodium store bought chicken stock
- 1 Tbsp fresh thyme leaves
- 1 Tbsp finely chopped fresh rosemary
- 1/2 cup fresh flat leaf parsley, finely chopped, plus more for garnish
- 1 cup celery
- 5 bay leaves
- optional: 1 pound parsnips, peeled and cut into 1/2 inch slices
- 1 3/4 lb carrots, peeled and cut on the diagonal into 1 inch pieces
- 1 1/2 lbs yukon gold potatoes, peeled and cut into 1 inch pieces
