- 1 lb. lean beef boneless round steak, about 1/2 inch thick
- 2 tsp vegetable oil

- 3 cups sliced mushrooms (8oz)
- 1/4 cup dry red wine
- 2 Tbsp cornstarch
- 1 cup condensed beef broth

- 1 red bell pepper, sliced

Cut squash in half lengthwise; scoop out seeds
- 1 medium spaghetti squash ( 2 - 2 1/2lbs)
- 1 lb. ground beef
- 1/2 cup chopped onion
- 1 cup chopped bell pepper
- 1/2 cup sliced fresh mushrooms
- 1 garlic clove, minced
- 1 tsp dried basil
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/8 tsp pepper
- 1 can (14 1/2oz) diced tomatoes with basil, oregano & garlic, drained
- 1 can (14 1/2oz) diced tomatoes with zesty, mild green chilies, drained
- 1 small jar pizza sauce
- 2/3 cup shredded mozzarella cheese

- 2 qts water
- 8 oz uncooked farfalle (bowtie pasta)
- 2 1/2 cups (1 inch) diagonally sliced asparagus
- 6 Tbsp ( 1 1/2 oz) grated fresh parmesan cheese, divided
- 1/4 cup fat free milk
- 1/4 cup egg substitute
- 2 Tbsp chopped fresh chives
- 1/4 tsp salt
- 2 bacon slices
- 1/4 cup chopped onion
- 2 garlic cloves, minced
- freshly ground black pepper
- chopped fresh chives (optional)
Roasted Asparagus with Lemony Breadcrumbs

Preheat oven to 425. Arrange asparagus on a rimmed baking sheet, and drizzle with oil
- 2 lbs asparagus, trimmed
- 1 Tbsp extra virgin olive oil
- coarse salt and freshly ground pepper
- 2 Tbsp unsalted butter
- 1/2 cup panko (Japanese breadcrumbs)
- 1/2 lemon, juiced and zested
- Garnish: 1/2 lemon, cut into wedges
