Baked Apple Slices

NOTE: Serve over ice cream
- 3 large baking apples, peeled and sliced
- 3/4 cup sugar
- 1 Tbsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/4 tsp ground ginger
- 1/4 cup apple cider
- 1/2 cup butter or margarine
- 1/2 cup walnuts or raisins
- vanilla ice cream
Honey Walleye

In a shallow bowl, beat eg; add honey
- 1 large egg
- 2 tsp honey
- 2 cups crushed butter flavored crackers (about 45-50)
- 1/2 tsp salt
- 1 1/2 lbs walleye fillets
- 1/2 cup canola oil
- Lemon wedges and minced fresh parsley, optional
Grilled Asparagus

1. Toss asparagus in 2 tsp of olive oil, salt and pepper lightly
- 32 thick asparagus spears, trimmed
- 6 Tbsp olive oil
- 1/2 tsp kosher salt, or to taste
- 1/4 tsp pepper, or to taste
- 3-5 Tbsp lemon juice
- 2-3 Tbsp fresh parmesan cheese, grated or shaved
- 2 hard boiled eggs, chopped (optional)
Grilled Sausage Sandwiches with Onion Sauce and Grilleed Pepper Relish

The relish and onion sauce would be great with other meats
- ITALIAN SAUSAGE:
- 4 hot or sweet Italian sausage links
- 4 Tbsp olive oil
- kosher salt and freshly ground black pepper
- 4 hoagie buns, split three quarters of the way thru
- 1/4 cup Dijon mustard
- Onion sauce (See Recipe)
- GRILLED RED PEPPER RELISH:
- 3 red bell peppers, grilled (see recipe), peeled, seeded, & coarsely chopped
- 3 cloves roasted garlic (see recipe), coarsely chopped
- 2 Tbsp red wine vinegar
- 3 Tbsp extra virgin olive oil
- 2 Tbsp finely chopped fresh flat leaf parsley leaves
- 2 Tbsp finely chopped fresh basil leaves
- kosher salt and freshly ground black pepper
- ONION SAUCE: (makes 3/4 cup)
- 2 Tbsp canola oil
- 2 large onions, halved and cut 1/4 inch thick
- 1 tsp ancho chile powder
- 1/2 tsp ground cinnamon
- 1/4 cup ketchup
- 1 tsp hot sauce
- 1/2 tsp kosher salt
- 1/4 tsp freshly ground black pepper

- 1/4 cup finely cubed brie
- 1/4 cup chopped hazelnuts
- 2 Tbsp butter or margarine, melted

- 1/2 cup dry bread crumbs
- 1 (.7oz) pkg Italian or zesty Italian dressing mix
- 1/3 cup margarine or butter, melted
- 1 1/2 lb (6 pieces) boneless, skinless chicken breasts
Bacon Wrapped Chicken Bites (CHIGS)

Preheat oven at 350. Mix brown sugar and chili powder
- 1 1/4 lbs. boneless skinless chicken breasts (about 4 breasts)
- 1 (1 lb) package sliced bacon
- 2/3 cup firmly packed brown sugar
- 2 Tbsp chili powder
Grilled Apple Rings

Mix sugar and cinnamon; reserve
- 1/3 cup sugar
- 1/4 tsp ground cinnamon
- 4 medium baking apples, cored & cut crosswise into 1 inch slices
- 1/3 cup margarine or butter, melted
