Half each zucchini and scoop out the flesh of each one
- 4 Zucchini
- 1 lb Grd Beef or Italian Sausage
- 2 Small or 1 Lg Onion
- 4 Cloves Garlic, Minced
- 1 tsp dry basil
- 2 tsp ground cumin
- 10 Cherry Tomatoes, Finely
- Chopped
- 2 Eggs
- 3 Tbsp Breadcrumbs
- 7oz Shredded Yellow Cheese
- 5oz Shredded Parmesan
- Cheese
- Salt & Pepper
- TOMATO SAUCE:
- 1 14.5oz can whole peeled
- Tomatoes
- 1-2 Tbsp Balsamic Vinegar
- 2 Cloves of Garlic
- Minced Salt & Pepper
- Pinch of Sugar

In large skillet, break up and brown ground beef in oil until no longer pink
- 1 lb ground beef
- 3 Tbsp oil (olive or vegetable)
- 14.5oz can green beans with juice (or steamed fresh beans)
- 3 Russet Potatoes (peeled &

- 1 Small White Onion (sliced
- thin)
- Addition - I also sauteed in
- butter a carton of shiitake

Jambalaya with Shrimp & Ham

Heat the oil in a large dutch oven over medium heat
- 1 Tbsp olive oil
- 1 Lg Onion, diced (about 2 cups)
- 1 Med Red Bell Pepper, seeded
- & diced (about 1 cup)
- 1 Med Yellow Bell Pepper,
- seeded & diced (about 1 cup)
- 2 Cloves Garlic, Minced (2 tsp)
- 1/2 tsp salt, plus more to taste
- 1/4 tsp grd black pepper
- 1 tsp paprika
- 1/2 tsp dried oregano
- 1/2 tsp dried thyme
- 1 bay leaf
- 1/4 tsp cayenne pepper
- 1 Tbsp Tomato Paste
- 6oz Smoked Ham, Diced
- 2 1/2 C. Low Sodium Chicken
- Broth
- 14.5oz can diced tomatoes
- 1 C. Uncooked long grain rice
- 1 lb medium shrimp, peeled &
- deveined
- Hot Pepper Sauce
Easy Cinnabon Monkey Bread

Preheat oven to 400. Grease a bundt pan well, and set aside
- 3 Cans Cinnabon Cinnamon Rolls Dough
- 1 C. Sugar
- 1 Tbsp. Cinnamon
- 1/2 C. Butter
- 1/2 C. Brown Sugar
- 2 Tbsp. honey (or could use Cinnabon syrup)
Key Lime Icebox Cake

Whisk together first 3 ingredients in a heavy saucepan
- 3/4C. granulated sugar
- 1/4 C. cornstarch
- 1/8 tsp. kosher salt
- 4 large egg yolks
- 2C. half and half
- 3 Tbsp butter
- 2 Tbsp key lime zest (reg lime zest & juice can be substituted)
- 1/2C. fresh key lime juice
- 45 graham cracker squares
- 1C. whipping cream
- 1/4C. powdered sugar

uIn a saucepan on very low heat, carefully melt the chocolate and butter, stirring constantly
- 3 (1oz) squares unsweetened chocolate
- 2 Tbsp butter
- 1/2C light corn syrup
- 1/2C white sugar
- 1/4C milk
- 1 tsp vanilla extract
Baked BLT Dip

Preheat oven to 350
- 1 LB bacon, cooked
- 1C. mayo
- 1C. sour cream
- 8oz cream cheese, softened
- 1 1/2C cheddar cheese
- 1 tomato, seeded & chopped
- 1/4C chopped green onions
- Additional green onions, cooked bacon, tomato & lettuce for garnish, if desired
Crispy Buttermilk Oven Fried Chicken (Makeover)

Heat oven to 425. Line 13x9 inch pan with foil, spray foil with cooking spray
- 1C. corn flakes cereal
- 1/2C all purpose flour
- 2 tsp garlic powder

- 1 tsp paprika
- 1/2 tsp salt

- 1 stick butter, melted
- 1 box graham cracker crumbs
- 1 (8oz) cream cheese, softened
- 1/4C. butter, softened
- 3C. powdered sugar
- 4 bananas, sliced
- 1 (20oz) can crushed pineapple, drained
- 1 (16oz) container Cool Whip, thawed or 1 1/2C. heavy whipping cream
- 1 (4oz) jar marschino cherries, stemmed
- 1C. walnuts or pecans, chopped
- hot fudge sauce, slightly warmed
