Country Ham Hash

Cook ham in a large skillet over medium heat, turning occasionally, until golden brown, about 10 minutes
- 8 oz 1/4 inch sliced country ham
- 3 Tbsp unsalted butter
- 1 1/2 lb russet potatoes, peeled and cut into 1/2 inch pieces
- 1 cup chopped red onion (from 1 medium onion)
- 1 cup chopped red or orange bell pepper
- 1 tsp chopped garlic
- 1/2 tsp black pepper
- 1/4 tsp kosher salt
- 1 Tbsp chopped fresh rosemary
Upside Down Peach Cake (GREAT!)

Melt 1/4 cup butter; pour into an ungreased 9 inch round baking pan
- 3/4 cup butter, softened, divided
- 1/2 cup packed brown sugar
- 2 cups sliced peeled fresh peaches
- 1 cup peeled and chopped peaches

Penne with Asparagus, Sage and Peas

Bring a large pot of salted water to a boil
- 1/2 lb penne
- 2 Tbsp extra virgin olive oil
- 3 garlic cloves, minced
- 1 lb. thick asparagus, cut into 1 inch lengths
- 2 cups chicken stock
- 2 cups (10oz) shelled peas or frozen baby peas, thawed
- 1/4 cup heavy cream
- 2 Tbsp unsalted butter
- 1 Tbsp chopped fresh sage
- 1/2 cup freshly grated Parmigiano-Reggiano cheese, plus more for serving

To Die For Carrot Cake (Emily Gift)

Preheat oven to 350. CAKE: Combine #1 ingredients
- Cake:
- (1) 1 1/4 cups unsweetened applesauce (or oil)
- 2 cups granulated sugar
- 3 eggs, room temperature
- (2) 2 cups all purpose flour
- 1 tsp baking soda
- 1 1/2 tsp baking powder
- 1/2 tsp salt
- 1 tsp cinnamon
- (3) 2 cups grated carrots
- 1 cup shredded sweetened coconut
- 1 cup chopped nuts (optional)
- 1 tsp vanilla
- 1 cup Dole crushed pineapple (not drained)(use the pineapple in
- JUICE not syrup)
- CREAM CHEESE FROSTING
- 1 cup butter (softened)
- 16 oz cream cheese (softened)
- 2 tsp vanilla
- 2 lbs powdered sugar
- top with toasted pecans or coconut if desired

Braised Chicken Thights with Slow Cooked Marinara

1. Combine tomatoes, garlic, onion, tomato paste, Parmesan rind, and basil stems in a 5 to 6 qt slow cooker
- 1 1/2 lb. ripe tomatoes, cored & chopped (about 5 cups)
- 2 garlic cloves, crushed
- 1/2 cup chopped yellow onion (from 1 small onion)
- 3 Tbsp tomato paste
- 1 (3 inch) piece Parmesan cheese rind
- 1 bunch fresh basil stems, plus 1/4 cup basil leaves
- 6 boneless, skinless chicken thighs (about 2 lbs)
- 1/2 tsp black pepper
- 2 tsp kosher salt, divided
- 1 Tbsp. olive oil
- 1 lb. uncooked fettuccine (or RICE), cooked according to package directions
- 1/4 cup grated Parmesan cheese
- NOTE: NEED TO ADD MORE SALT, PEPPER & BASIL, MAYBE A SPLASH OF RED WINE AND WOULD BE BETTER SERVED WITH RICE INSTEAD OF FETTUCCINE.
Pina Colada Fruit Dip

Mix all ingredients together and serve with the fruit cut into finger size pieces
- 8 oz cream cheese
- 2 pkgs dry pina coloda mix
- 2 Tbsp powdered sugar
- 2 Tbsp milk
- Assorted fruit: pineapples, strawberries, melon, cantaloupe, etc.
Bistro-Style Short Ribs (Tyler Florence)

Preheat a cast iron skillet or outdoor grill
- 3 Tbsp extra virgin olive oil
- 4 lbs short ribs, in 1 long piece or at least in pairs
- kosher salt and freshly ground black pepper
- 1 medium onion, chopped
- 2 carrots, chopped
- 1 large tomato, quartered
- 3 ribs celery
- 1/2 head garlic, peeled
- 1/4 bunch fresh thyme
- 1 1/2 cups dry red wine
- 2 cups low sodium beef stock
- 4 Tbsp chopped fresh flat parsley
Quick Sauteed Eggplant
