Chicken With Asiago, Prosciutto, and Sage

Another from Bon Appetit. This is fast becoming an often-requested dish here at home
- 4 small boneless skinless chicken breast halves, pounded to 1/4-inch thickness
- all-purpose flour
- 6 tablespoons butter, divided
- 1/2 cup asiago cheese, finely grated
- 8 slices prosciutto, folded crosswise
- 2/3 cup dry white wine
- 2 teaspoons fresh sage, minced
- 4 whole sage leaves, for garnish
Slow Cooker Pasta e Fagioli Recipe

- 1 pound ground beef
- 1 medium onion, chopped
- 1 carton (32 ounces) chicken broth
- 2 cans (14-1/2 ounces each) diced tomatoes, undrained
- 1 can (15 ounces) white kidney or cannellini beans, rinsed and drained
- 2 medium carrots, chopped
- 1-1/2 cups finely chopped cabbage
- 1 celery rib, chopped
- 2 tablespoons minced fresh basil or 2 teaspoons dried basil
- 2 garlic cloves, minced
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 cup ditalini or other small pasta
- Grated Parmesan cheese, optional
Zesty Chicken Fajitas in Lettuce

In a sauté pan over medium heat, put in olive oil and the chicken strips
- 3 tablespoons olive oil
- 1 red bell pepper, stemmed, seeded, and cut into strips
- 1 white onion, peeled, halved, and sliced
- 3 skinless, boneless chicken breasts(6 to 8 ounces apiece), cut into strips
- 8 large iceberg lettuce leaves, washed and patted dry
- Nonfat Greek yogurt (optional)
- 1/4 cup chopped cilantro
- 1/2 cup salsa
- Salt and pepper, to taste
Berry Chicken Salad

Prepare the fruits and lettuce by washing and completely drying
- 4 cups baby spinach (remove stems if desired)
- 1/2 cup fresh blueberries
- 1/2 cup fresh strawberries
- 1/2 cup clementine oranges
- 2-3 tablespoons feta cheese
- 2 tablespoons slivered almonds
- 1 large boneless, skinless chicken breast (plus olive oil, salt, and pepper)
- Dressing
- 1/4 cup olive oil
- 1 tablespoon balsamic vinegar
- 1/2 teaspoon Dijon mustard
- 1/2 teaspoon honey
- Optional: squeeze of lemon, Mrs. Dash chicken grilling blends seasoning
Broccoli Grape and Apple Salad

Combine broccoli, grapes, apples, nuts or sunflower seeds and red onion in large bowl; set aside
- 4 cups broccoli, cut into bite-size pieces and blanched
- 1 red apple, chopped
- 1 green apple, chopped
- 1 cups halved red seedless grapes
- 1/2 cup raisins
- 1/2 cup chopped nuts (almonds. pecans, walnuts etc)
- 1 cup sunflower seeds
- 1/2 cup chopped red onion
- Dressing
- 1 cup oil
- 3/4 cup sugar
- 1/3 cup cider vinegar
- 2 Tbsp poppy seeds
- 1 1/2 Tbsp lemon juice
- 1 tsp salt
- 1 tsp ground mustard

- 1 medium onion, chopped
- 3 garlic cloves, minced
- 2 chipotle peppers in adobo sauce
- 2 cans (14-1/2 ounces each) chicken broth, divided
- 1 can (15 ounces) hominy, rinsed and drained
- 1 can (4 ounces) chopped green chilies
- 1 teaspoon dried oregano
- 1 teaspoon ground cumin

- 1/4 cup butter

- 1 cup diced green bell pepper
- 1 1/2 teaspoons minced garlic
- 1 (6 ounce) can tomato paste
- 1 (14.5 ounce) can diced tomatoes
- 2 teaspoons Worcestershire sauce (such as Lea & Perrins®)
- 1 1/2 teaspoons Cajun seasoning (such as Tony Chachere's), or to taste
- 1/2 teaspoon ground black pepper
- 4 cups low-sodium chicken broth
- 2 cups medium-grain rice
- 3/4 pound shrimp, peeled and deveined
- 3/4 pound cod fillets, cut into 1 1/2-inch chunks (optional)
- salt to taste
- 1/3 cup chopped fresh parsley
Cheesy Baked Cauliflower low carb

- 1/2 large head caulflower, coarsely chopped
- 1/3 cup reduced-fat sharp cheddar
- 1/4 cup coarsely grated Parmesan cheese
- 2 T almond flour
- 1/2 tsp. salt
- 1/2 tsp. ranch powder (You can substitute another all-purpose seasoning blend that tastes good with cauliflower)
- fresh-ground black pepper to taste
