Golden Fruit and Nut Granola Bars

1. Preheat oven to 325° F
- 1/4 cup plus 2 Tbsp. flaxseeds
- 1/2 cup nut butter, homemade or store-bought
- 1/2 cup light agave nectar
- 1 cup golden raisins
- 1 teaspoon vanilla extract
- 1/4 teaspoon kosher salt
- 1 1/2 cups rolled oats
- 1 cup chopped raw, unsalted mixed nuts, such as almonds, pistachios and cashews
- Flaky sea salt, optional
Apple Walnut Cranberry Salad

In a large bowl, toss together all the salad ingredients
- Salad
- 1 bag 50% blend mixed greens and spinach, washed
- 2 green apples, sliced
- 1/3 cup dried cranberries
- 1/2 cup gorgonzola cheese, crumbled
- 1/2 cup walnut pieces
- Apple Cider Vinaigrette
- 1/4 cup olive oil
- 1/4 cup apple cider vinegar
- 1/2 teaspoon dijon mustard
- 1/4 teaspoon garlic powder
- 1/4 teaspoon dried oregano
- 1/4 teaspoon dried basil
- 1/4 teaspoon freshly ground black pepper
Artichoke Dip with Variations

wrap artichokes in two towels press to remove as much excess liquid as possible
- The Basic Dip:
- 2 14 oz cans artichoke hearts, rinsed and drained
- 1 8 oz carton sour cream
- 2 tbsp flour
- 1/2 cup mayo
- 1/2 cup finely shredded parm cheese
Grilled Asparagus with Mozzarella

- 2 tablespoons fresh lemon juice
- 1 medium shallot, finely chopped
- 1 tablespoon coarsely chopped chervil or flat-leaf parsley
- 1/2 teaspoon kosher salt
- 1/4 teaspoon coarsely cracked black pepper
- 1/4 cup plus 1 tablespoon extra-virgin olive oil
Turkey Burgers with Special Sauce

Prepare grill. Combine first 6 ingredients in a large bowl
- 1/4 cup chopped green onions
- 2 tablespoons fresh orange juice
- 1 tablespoon low-sodium soy sauce
- 1 teaspoon finely chopped peeled fresh ginger
- 1 garlic clove, minced
- 1 pound ground turkey breast
- Cooking spray
- 1/2 cup Special Sauce
- 4 (1 1/2-ounce) whole wheat hamburger buns
- 4 curly leaf lettuce leaves

- 1 cup cold butter, cubed
- 2 cups light brown sugar
- 2 cups flour

- 1 cup powdered sugar

CREAMY PARMESAN SCALLOPED POTATOES

Preheat oven to 325 degrees
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 1 1/2 cup whipping cream can also use half and half
- 1/2 cup grated Parmesan cheese divided
- 1 cup shredded mozzarella cheese divided
- 2 pounds russet potatoes peeled and sliced about 1/8 inch thick
- Snipped fresh chives for garnish
Cowboy Butter

Serve with grilled meats, like steak or chicken, for dipping
- 1 c. butter, melted
- Juice of 1/2 a lemon
- 2 cloves garlic, minced
- 1 small shallot, minced
- 2 tbsp. Dijon mustard
- 1 tbsp. prepared horseradish
- Pinch of cayenne pepper
- 1/4 tsp. paprika
- 2 tbsp. Freshly Chopped Parsley
- 1 tbsp. freshly chopped chives
- 2 tsp. minced thyme
- kosher salt
- Freshly ground black pepper
Flank Steak Marinade

Combine balsamic vinegar, lemon juice, Dijon, Worcestershire sauce, garlic, and spices, then whisk in olive oil
- 2-3 pound flank steak or London Broil
- 2 T balsamic vinegar (I like Fini Balsamic Vinegar)
- 2 T fresh lemon juice
- 1 T Dijon mustard
- 1 T Worcestershire sauce
- 1 T finely minced fresh garlic
- 1/2 tsp. dried oregano
- 1/2 tsp. dried basil
- 1/2 tsp. dried thyme
- 1 tsp. smoked paprika or paprika
- (original recipe had cayenne pepper, which I stopped using through the years)
- 1/4 cup olive oil
