The Best Chocolate Cake You'll Ever Have

Prepare cake layers: Preheat oven to 350°F
- 2 c. all purpose flour
- 1 c. unsweetened cocoa
- 1 1/2 tsp. baking soda
- 1/4 th tsp. salt
- 3/4 c. Butter or Margarine, Softened
- 1 c. packed brown sugar
- 1 c. granulated sugar
- 3 large eggs
- 2 tsp. vanilla extract
- 1 1/2 c. low-fat buttermilk
Broccoli Apple Salad

. Combine salad ingredients in large bowl
- Salad:
- 1 bunch broccoli, cut into small florets
- 1/2 cup red onion, diced small
- 1 cup celery, diced small
- 1 apple, sweet variety, diced small
- 8 slices bacon, cooked & crumbled
- 1/2 cup dried cranberries (optional- I skipped)
- Dressing:
- 3/4 cup mayonnaise
- 1/4 cup sugar
- 2 Tbsp. apple cider vinegar
Pan Roasted Beef Tenderloin

Preheat oven to 450°. Trim silverskin and fat from tenderloin; wash it and dry well with paper towels
- Trim and Truss
- 3 lbs cut beef tenderloin
- Rub Tenderloin with
- 1 ⁄4 cup olive oil
- 1 tablespoon kosher salt
- 1 tablespoon fresh coarse ground black pepper
Chocolate Oreo Cream Cake

1.Prepare cake mix according to package directions for 2 9-inch round cakes
- Cake:
- 1 pkg chocolate cake mix (I used triple chocolate)
- ingredients need to make the cake on the back of the box
- Filling:
- 8 oz. reduced fat cream cheese, softened
- 1/2 cup sugar
- 2 cups Cool whip (I used the extra creamy kind)
- 12 oreo cookies, coarsely crushed
- Frosting:
- 1/3 cup plus 1 Tbsp. cocoa powder
- 6 Tbsp. butter, softened
- 4 1/2 cup powdered sugar
- 1 1/2 tsp. vanilla
- 5 to 6 Tbsp milk or more if needed
Garlic Herb Roasted Shrimp with Homemade Cocktail Sauce

Preheat oven to 400 degrees
- Cocktail Sauce:
- 2 lbs. of Shrimp, peeled and deveined
- 3-4 garlic cloves, minced
- 4 tablespoons of olive oil
- 1/2 teaspoon of red pepper flakes
- 1 teaspoon of dry basil
- salt & pepper
- 1/2 cup of ketchup
- 2 heaping tablespoons of horseradish
Fresh Fettuccine with Roasted Chicken and Broccoli Rabe

Bring a large pot of salted water to a boil
- 1 pound broccoli rabe, trimmed, stalks cut crosswise into 3-inch pieces
- 1 (9-ounce) container fresh fettuccine pasta
- 1 (14-ounce) can reduced-sodium chicken broth
- 1/4 cup fresh lemon juice
- 3 cups shredded roasted chicken (from 1 roasted chicken)
- 3/4 cup freshly grated Parmesan
- 1/2 cup pine nuts, toasted
- 2 tablespoons chopped fresh parsley leaves
- 2 tablespoons olive oil
- 1 tablespoon lemon zest
- Salt and freshly ground black pepper
