- 1 (28-ounce) can crushed Italian tomatoes, any brand
- 1/2 cup, 10 to 12 fresh basil leaves, torn into small pieces
- Salt and pepper
- 1 cup store bought basil pesto sauce
- 1 cup ricotta cheese
- 1/2 cup grated Parmigiano-Reggiano, a couple of handfuls
- 1/2 pound fresh mozzarella

Grind onions, ginger, garlic, chillies and lemon grass in a small food processor until fine
- Basting paste and marinade :
- 2 chicken breasts, skin left on
- 3 medium onions
- 3 garlic
- 1 inch ginger, peeled and sliced
- 1 lemon grass, sliced thinly
- 2 red chillies, chunked
- 1-2 T chopped tumeric leaf
- 1/2 tsp sugar
