Honey Lemon Garlic Chicken

Preheat oven to 360°F | 180°C
- 5 bone in, skin on chicken thighs (2 lbs | 1 kg)
- Salt to taste
- 1/2 cup honey
- 1/4 cup fresh squeezed lemon juice (or juice of 1 lemon)
- 1 tablespoon soy sauce
- 1 tablespoon rice wine vinegar
- 2 heaping tablespoons minced garlic
- 6 whole garlic cloves, peeled
- Lemon slices and zest to garnish
- Sliced green onions, to garnish
Peach Barbecue Sauce

Heat olive oil in a large saucepan over medium heat
- 1 tablespoon olive oil
- 1 1/2 cups chopped onion
- 3 cups chopped peeled peaches (about 4 large)
- 1 teaspoon freshly ground black pepper
- 1/2 teaspoon salt
- 6 garlic cloves, minced
- 2 cups beer
- 1 cup ketchup
- 1 cup prepared mustard
- 1/4 cup packed brown sugar
- 3 tablespoons cider vinegar
- 2 tablespoons Worcestershire sauce
- 2 teaspoons ground cumin
- 1 1/2 teaspoons ground coriander
- 2 teaspoons hot pepper sauce
- 1/4 teaspoon ground cinnamon
Brazilian Style Pork Ribs

1. Process or blend the first 10 ingredients in a food processor or blender until obtaining a homogeneous mixture
- 4 teaspoons salt (1 teaspoon per pound or 1/2 kg)
- 4 garlic cloves, minced
- 1 medium white onion, chopped
- 1 teaspoon ground black pepper
- 1-1/2 teaspoons Dijon mustard
- 1-1/2 teaspoons Worcestershire sauce
- 1 teaspoon dried oregano
- 1/4 teaspoon ground cumin
- 1 teaspoon malagueta pepper or chili (optional)**
- 1/2 cup apple cider vinegar
- 4 pounds ( about 2 kg) pork spareribs (whole)
- Vegetable oil (only for brushing)
- Honey (optional)
- If you do not like hot/spicy food, skip this ingredient.

combine crumbs, milk, feta, parsley, scallions, salt, oregano and egg in a mixing bowl
- 1 cup bread crumbs
- 1/4 cup milk (whole or 2%)
- 1/4 cup feta cheese, crumbled
- 1/4 cup minced fresh parsley
- 2 tbsp. scallions, minced
- 1 tsp kosher salt
- 2 tsp dried oregano leaves
- 1 egg, lightly beaten
- 1 lb ground chuck
- 2 tbsp. olive oil
- 3/4 cup Kalamata olives, pitted, halved
- 1 tbsp. garlic minced
- 1 tsp red pepper flakes
- 6 cups tomatoes, quartered, or 2 cans whole tomatoes (28oz each)
- salt and pepper to taste
Pesto chicken stuffed shells

Combine all the ingredients and stuff into the cooked jumbo shells
- 16 jumbo pasta shells, cooked and drained
- 4 oz cream cheese, softened
- 1 cup freshly grated Parmesan cheese plus 1/4 cup for topping
- 3 tablespoons prepared pesto
- 2 cups shredded cooked chicken
- 2 cloves garlic, minced
- salt and pepper to taste

. Pre-heat oven to 350F. Line a brownie pan with parchment paper and set aside
- For Cheesecake Batter:
- 250 gm cream cheese (about half a pound), softened at room temp
- 1/2 cup sugar (or a little less)
- 2 eggs
- 1 tsp vanilla extract
- 1/3 cup whipping cream (or normal cream)
- Small pinch of salt
- For Dipping Chocolate:
- 8 ounces of semi sweet or milk chocolate, melted

- 2 1/4 cups (11 1/4 ounces) unbleached all-purpose flour
- 1/2 teaspoon baking soda

- 1 1/2 cups (10 1/2 ounces) sugar, plus 1/3 cup for rolling
