Roasted Garlic Bacon Dip

Using a knife, cut the tops off the two heads of garlic
- 2 heads of garlic
- olive oil for roasting the garlic
- 8 slices of bacon
- 1 1/2 cups of sour cream
- 3/4 cup of mayonnaise
- 3 tablespoons (or more) of finely chopped green onions
- 1 Tablespoons of Worcestershire Sauce
- 1/4 teaspoon of salt and 1/4 teaspoon of pepper
Curried Egg Salad Sandwiches

- 12 hard boiled eggs, peeled and coarsely chopped
- 3/4 cup mayo
- 1/4 cup chopped scallions

- 1 bunch watercress, cleaned and trimmed for garnish
Seafood Bisque Casserole

Directions Preheat oven broiler
- 6 slices bacon, cooked and crumbled
- 6 tablespoons butter
- 2–3 large shallots, peeled/sliced
- 1 pound large shrimp, peeled
- 1 pound bay scallops
- ½ teaspoon salt
- 1 teaspoon white pepper
- ½ cup sherry, divided
- 4 tablespoons all-purpose flour
- 1¾ cups milk, half & half or combination (room temperature)
- ½ pound cooked crabmeat
- 2 cups grated Swiss cheese
- 1 cup Panko bread crumbs
- ½ cup minced parsley
- 6 cups cooked pasta*
- ddle rack and broil 4–5 minutes to melt cheese and brown crumbs. Garnish with bacon and parsley. Serve immediately.
- * If preferred, the bisque can be prepared as noted without the pasta to be spooned over grits, rice, mashed potatoes or into phyllo pastry cups.
Lean Philly Cheesesteaks

Heat oil in a large nonstick skillet over medium-high heat
- 1 tablespoon olive oil
- 1 1/2 cups thinly sliced onion
- 1 cup sliced red bell pepper
- 1 cup sliced green bell pepper
- 5 garlic cloves, minced
- 2 teaspoons sugar
- 1 teaspoon dried oregano
- 2 teaspoons white wine vinegar
