Preheat oven to 350°. Heat the olive oil in a large nonstick skillet over medium-high heat
- 1 teaspoon olive oil
- 1 cup finely chopped onion
- 1/2 cup finely chopped carrot
- 1 teaspoon dried oregano
- 2 garlic cloves, minced
- 1 cup ketchup, divided
- 1 1/2 pounds ground beef, extra lean (raw)
- 1 cup finely crushed fat-free saltine crackers (about 20)
- 2 tablespoons prepared mustard
- 1 teaspoon Worcestershire sauce
- 1/4 teaspoon freshly ground black pepper
- 2 large eggs
- Cooking spray
Pumpkin Cheesecake Bread with Cinnamon Glaze

Preheat oven to 325. Grease and flour two 8" loaf pans
- Filling:
- 1-8 oz cream cheese, softened
- 3/4 cup sugar
- 1 Tablespoon flour
- 1 egg
- 1 teaspoon vanilla
- Bread:
- 1 2/3 cups flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground cloves
- 1/4 teaspoon ginger
- 1/4 teaspoon nutmeg
- 1 1/4 cups pumpkin puree
- 1/2 cup canola oil
- 2 eggs
- 1 1/2 cup sugar
- 1 cup chopped pecans or walnuts (I have done either, both are good)
- Cinnamon Glaze:
- 1 cup powdered sugar
- 2 1/2 Tablespoons half & half
- 1 teaspoon cinnamon
- Garnish- 1/2 cup chopped pecans or walnuts
Pasta with Provençal Wine Sauce

Heat 2 tablespoons of the olive oil in a medium saucepan
- 1/4 cup plus 2 tablespoons olive oil
- 1 medium onion, finely chopped
- Salt
- One 35-ounce can Italian plum tomatoes, drained and chopped
- 2 cups red or white wine
- 1 whole clove
- 1 bay leaf
- 3 garlic cloves, finely chopped
- 2/3 cup oil-cured black olives, pitted and coarsely chopped
- 1 tablespoon capers, drained
- 1/2 cup coarsely chopped mixed herbs, such as basil, parsley and thyme
- Freshly ground pepper
- 1 pound penne rigate or rigatoni
Maggiano’s House Salad

To prepare the dressing, combine all the ingredients except for the oil and oregano in the jar of a blender
- 1/3 cup red wine vinegar
- 1 tablespoon Dijon mustard
- 1 tablespoon white sugar
- 1/2 cup water
- 2 teaspoons minced garlic
- 2 1/2 teaspoons kosher or coarse-grained salt
- freshly ground pepper to taste
- 1 cup olive or vegetable oil (depending on your preference)
- 1 generous pinch dried oregano
- Salad
- 5 cups chopped Romaine lettuce
- 5 cups chopped iceberg lettuce
- 3 ounces Gorgonzola cheese
- 4 ounces thinly sliced prosciutto
- 1 small red onion, thinly sliced
- 1/2 about 1/2 cup vegetable oil (for cooking the prosciutto)

- 2 pkgs Thin Sliced Chicken Cutlets
- 2 eggs
- 1-2 cup bread crumbs
- 1/2 cup parmesan cheese
- 3/4 cup fresh basil pesto (we got this at an organic farm)
- 8 oz Fresh mozzerella cheese
- Salt, Pepper and Italian seasoning
