Chicken and Mushroom Fricassee

Pat the chicken dry, and lightly pound the chicken breast to an even layer using a meat mallet (or a metal ladle)
- 4 boneless skinless chicken breasts
- 1 tablespoon butter
- 1 tablespoon olive oil
- 1 pound cremini mushrooms, caps wiped clean and cut 1/4" thick
- 1 medium onion, diced (about 1 cup)
- 1/4 cup dry white wine
- 1 tablespoon unbleached all-purpose flour
- 1 medium garlic clove, grated or minced
- 1-1/2 cups chicken stock
- 1/3 cup sour cream
- 1 egg yolk
- 2 teaspoons lemon juice (about half a lemon)
- 2 tablespoons chopped parsley
Caramelized Onion Roasted Garlic Bisque

Preheat oven to 350° F. Remove papery outer skin from the garlic head (do not peel or separate the cloves)
- 1 large whole garlic head
- 1 1/2 tablespoons olive oil divided use
- 9 cups about 4 large thinly sliced sweet onions
- 2 1/2 cups about 2 medium sliced leeks
- 1 teaspoon salt divided use
- 1 teaspoon dried thyme
- 2 tablespoons all-purpose flour
- 1/3 cup dry white wine
- 4 cups vegetable broth
- 2 cups milk
- Fresh thyme leaves for garnish
- Freshly ground black pepper for garnish
Mini Spinach Lasagna Roll-Ups

Beef Stroganoff, Slow Cooker

In a slow cooker, combine the soup, onion, Worcestershire Sauce and water and stir
- 2 lbs. cubed beef stew meat
- 2 cans condensed Golden mushroom soup (must be Golden)
- 1 cup chopped onion
- 1/2 packet onion soup mix
- 2 Tbsp. Worcestershire Sauce
- 1/2 cup water (or 1/2 cup beef broth)
- Salt & Pepper to taste
- 8 oz. cream cheese
- 3 Tsp. sour cream
Chicken Pineapple Kebobs

Add ketchup, soy sauce, honey, mustard, lemon juice, brown sugar and garlic to a small pan and cook for 10 minutes
- 1 cup Ketchup
- 1/4 cup Soy Sauce
- 1/4 cup Honey
- 1 tbsp Mustard
- 1/2 cup Brown Sugar
- 1 tsp Minced Garlic
- 1 tbsp Lemon Juice
- 2 lb Boneless Skinless Chicken Breasts
- 1 Pineapple
- 1 Red Onion
- 1 Green Bell Pepper
- Salt and Pepper (to taste)
Slow Cooker Beef and Noodles

1.Stir together beef and soups in slow cooker 2
- 1 1/2 pounds stew meat, cubed
- 1 (10 1/2 oz) can French Onion Soup
- 1 (10 1/2 oz) can Cream of Celery Soup
- Noodles,Rice or Mashed Potatoes to serve on the side
White Chicken Chili

1.Cook chicken in a 4-quart, heavy bottomed Dutch oven or stockpot until tender, about 15 minutes
- ◦4 skinless, boneless chicken breasts
- ◦4 cups chicken stock
- ◦1 clove garlic, minced
- ◦1 medium onion, diced
- ◦2 (15-ounce) can white beans, with liquids from beans
- ◦1 (4-ounce) can diced green chilis, with liquids from chilis
- ◦1 teaspoon dried oregano
- ◦1 teaspoon ground cumin
- ◦1/2 teaspoon chili powder
- ◦1 teaspoon salt
- ◦1 teaspoon ground black pepper
- ◦1 teaspoon chopped fresh oregano
Edamame Hummus

. Cook the edamame in boiling water until just tender, about 10 minutes
- 1 lb. frozen edamame, shelled and unsalted
- 1/4 cup lemon juice
- 3 tbsp. tahini
- 2 small garlic cloves, peeled
- 3 tsp. olive oil
- 6 tbsp. water
- 1 1/2 tsp. kosher salt
- 1/4 tsp. freshly ground black pepper
- 3 sprigs fresh parsley or cilantro
Pepperoni Bread

- 1 (1 pound) loaf frozen bread dough, thawed
- 1 egg, beaten
- 4 ounces sliced pepperoni sausage
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1 1/2 teaspoons Italian seasoning
